This is a great recipe as written, and I make it regularly, but I make a few changes each time depending on what I already have on hand. I sometimes make any (or all) of the following adjustments and the recipe is still great:
add a red bell pepper when I put in the onion & garlic;
skip the sugar and add a can of pineapple;
add chickpeas and/or cauliflower.
Depending on who I'm cooking for, I might also use a hotter curry powder or add red pepper flakes to make it spicier, but that just depends on personal preference for spicy foods.
