Sauteed Mushrooms

Three stars because I like the idea, but they were inedible when made as written. The full packet of ranch mix is just too much. When made with half the seasoning, they make a decent side dish.

Crock Pot Portobello Chicken

Great recipe. The chicken was really juicy and the dish was perfect over pasta. I definitely altered it some: I added baby carrots, garlic, and sliced onion. I also used a sun dried tomato vinaigrette instead of regular Italian. I think it's most important to pick a good-quality salad dressing and go with whatever variety you usually like best, since it's the main source of flavor in the meal. I also used fresh bone-in chicken breasts instead of frozen, so I reduced the cooking time, of course. All in all, yummy!

Shrimp Quiche

It was 5 stars with the changes I made based on some other reviews, so I guess I can't technically rate the recipe as is. Changes: used chopped up frozen cocktail shrimp, more green onion, Swiss instead of Gruyere, and added a little bit of cayenne pepper and soy sauce. I also mixed all the ingredients before pouring into the shell, and increased the cook time by about 10 minutes. Two of us ate the entire quiche for lunch. So yummy!

Curried Coconut Chicken

This is a great recipe as written, and I make it regularly, but I make a few changes each time depending on what I already have on hand. I sometimes make any (or all) of the following adjustments and the recipe is still great: add a red bell pepper when I put in the onion & garlic; skip the sugar and add a can of pineapple; add chickpeas and/or cauliflower. Depending on who I'm cooking for, I might also use a hotter curry powder or add red pepper flakes to make it spicier, but that just depends on personal preference for spicy foods. Thanks for the recipe, it's awesome and soooo easy!
