Savory Diet Chicken

I followed the recipe, as listed, except for the quantity of vegetables, which was way too much to fit the pan. The chicken came out dry with little taste. I used boneless, skinless breasts, which I suspect was the problem. The recipe doesn't specify whether or not the chicken is skinless. Since there are huge discrepancies in the ratings, my guess is that the good results are achieved with skin on the breasts. No one liked the results, but I'm trying to salvage the leftovers in a stew today.

Boneless Garlic and Rosemary Rubbed Prime Rib with Red Wine Mushroom Sauce

The meat/seasoning was delicious, but I would recommend cooking it to a slightly higher temperature if you only have one oven. I think it would still please those who like med-rare, but give some more time to raise the oven temperature to complete side dishes.

Roasted Rosemary Chicken And Vegetables

This was delicious! I made very few changes: fresh rosemary instead of dried, baby carrots, all red pepper, no green, no eggplant, but I did add potato chunks. I was tempted to alter the marinade, but I'm so glad I didn't! This is a keeper! This was not "greasy" as one reviewer claimed, but if you toss to coat and don't put the entire marinade in the pan you may avoid a mistake. My suggestion is to look at the ingredients, and cut them to the size that will make them all cook at the same amount of time.
