Ziti with Italian Sausage

Very tasty, but YES, more sauce. I used a half of jar of leftover spaghetti sauce with the tomatoes. I added garlic to the meat instead of the powder to the sauce. I mixed the meat, sauce and mushrooms and layered the this, the pasta and the cheese. Next time I would mix everything but the cheese. And I put it in the oven for only about 20 minutes.

Zucchini Jelly

I have made this twice. Both times I used the 20+ oz. can of pineapple. Drain the can a LOT. And if I had it to do over, I would have reduced the sugar. Really sweet the second time because I ran out of lemon juice and finished it with key lime juice. It doesn't give you a time on how long to cook it. Mine was two to three hours. And I thought it might have too much liquid so I boiled uncovered. If it looks like about four cups when you are done, throw in the gelatin. If it looks like more, then you may have to add pectin to get it to jell. The first time I didn't peel or seed. Worked fine and it's Christmas colors! But I took it to work and every body loved it.

Homestyle Meatloaf

YUM! I used a squirt of yellow mustard, a 12 oz. package of sausage and a half box of stuffing leftover from another recipe instead of the quick oats. I also got busy, cooked it for a little longer than I was supposed to so I put the reserved ketchup mixture on without putting it back in the oven. Very tasty!

Peanut Butter Pie XVII

I used a store bought graham cracher crust and heaped the filling in! I think the confectioners' sugar is to add more sweet to the whipped heavy cream. But again, I used store bought whipped cream and split the container. Regardless, AMAZING!

Roasted Acorn Squash and Crawfish Bisque

I had to make this soup twice and I learned some important things. Do not try to save time by putting the squash in the microwave. Drain any excess liquid in the squash before removing the flesh. Green bell is OK, half and half is not. We thought it was too sweet the first time, so I removed the nutmeg and added 1 tsp. cayenne pepper, 1 tsp. ginger and 1/2 tsp. cumin. Also 1 cup basil seemed alot so I used 2 Tbs. dried basil. I was surprised to find the crawfish at Walmart, but I did add shrimp to the first batch. It's a lot of work, but I would make it again.
