Creamy Au Gratin Potatoes
What a delicious and simple recipe! I used a cheddar-jack cheese blend and used the extra cheese as suggested by a reader as well as made 1.5x the sauce (3 cups 1% milk and 3 cups shredded cheese to the 4 russet potatoes.) Nice to be able to put a layer of the sauce in the middle of all the sliced potatoes as well as on top. That was a good tip. Did not use the sliced onions either...don't think the texture would have appealed to me. Got 6 big servings out of the recipe.

Slow Cooker Beef Pot Roast
Best pot roast I have ever made. I did double the amount of fresh thyme and rosemary as per another reader's suggestion. The gravy was spectacular; I loved the fresh taste without the overload of salt you get when you add dried soup mixes or condensed soups. Served with yukon gold mashed potatoes. Awesome meal!

Oh-So-Good Chicken
Very good, similar to Chicken Tacos. For dishes like that one and this one, I like to use shredded up rotisserie chicken. A little more fat this way, but much better flavor, and easier, too!
