Mom's Secret Recipe Beef Stew

Reviewed: Oct. 6, 2009
Great Smells is right!!! The taste ws even better. Note, that I used the Awesome Red Wine Pot Roast recipe that I found on here to make the Pot Roast with the exception that I cooked for 2 1/2 hours. Then refrigerated the roast until the next day. The I folled this recipe. My husband and I loved it. And my son the next day asked me to hold on to the recipe because it was the best beef stew he had ever had. I could not find the Italian seasoned tomatos but found something called seasoned diced tomatoes. I also added a 1/2 cup Sangria as well. This recipe is definitely as keeper!

Awesome Red Wine Pot Roast

Reviewed: Oct. 6, 2009
I prepared this roast exactly as directed accept I used 1 cup beef broth and 1 cup sangria. I cooked it for only 2 1/2 hours, refrigerated overnight. Then I used the cut up the roast in the Mom's Secret Recipe Beef Stew recipe found on here. The roast was extremely tender and tasty. Definitely easy and a keeper for again and again.

Gingery Carrot Salad

Reviewed: Oct. 18, 2009
I made this as a warm carrot dish. It was fantastic. Followed the directions with a few changes because of not having certain ingrediants. I used 2 tablespoons of honey as another review suggested instead of the splenda. Used 1/8 tsp ground ginger instead of fresh ginger. Omitted the rainins because I didn't have any. Mixed all together and then cooked on medium burner on the stove top until bubbly. These were really good.

Three Meat Cannelloni Bake

Reviewed: Jun. 9, 2010
This recipe was fantastic. I used cheap store bought chunky marinara sauce instead of tomato sauce. I used 1 lb ground round and 1 lb italian sausage. I used store bought cannelloni noodles and did not boil first. My mother taught me a long time ago to not boil lasagna noodles so I thought why not try this with these as well. So I layered some sauce in the bottom of 11x17 pan, stuffed the noodles right out of the box, placed in the pan in a single layer, topped with remaining spaghetti sauce mixture and then added a 1/2 cup water. Covered the pan and baked in a 400 degree oven for 20 - 25 minutes until bubbly. Turned off oven, removed pan and added a layer of mozzarella cheese. Put back in oven (still turned off but still warm) until the cheese melted. Let set for 2 minutes then served. Noodles were perfect!

I made these for an outdoor concert at Ravinia. Please look at the serving size. I missed that part before mixing up the cream cheese mixture. These were very good but a little oily. Perfect for the venue that they were prepared for.

Nana V's Company Cake

Reviewed: Jul. 14, 2010
I have made this 2 times and it has been a hit each time. The first time I made this was for a bbq that I found out on arrival was also a birthday party. Everyone at the party preferred this over the bakery bought cake. The second time was for an outdoor concert. Everyone who tried this sought me out to say they loved it. I used both strawberries and blueberries on top. Each to prepare. Perfect combination for a great summer treat!

Slow Cooker Pulled Pork

Reviewed: Aug. 29, 2011
I made this twice. Once with the pork tenderloin. It was okay but I found it a bit dry. So I talked to my butcher and he suggested that I try it with a pork butt roast. Holy cow, did it make a difference. I used a 5 lb pork but roast and used enough A&W Root Beer to almost cover the roast. I set the crock pot on low overnight. Shredded the beef (super easy, just fell apart). Then added 2 bottles of BBQ sauce, plus 1 cup of the drippings from the crock pot. Baked in the oven for 1 hour at 250 degrees. It got rave reviews from everyone! I will make this again! One of the easiest things I have ever made.

Fantastic both in taste and easy to make. However, I would double the recipe as it goes fast! Per previous reviews, Granny Smiths are the best apples to use!

Chocolate Trifle

Reviewed: Aug. 29, 2011
This was so yummy! I can see why awards were won on this recipe. I followed the suggestions of Roxanne323 and did the following. 1. Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares. 2. In a large bowl, combine pudding mix and water, and in a separate bowl whipped 1/2 pint heavy cream and 3 tbsp sugar, then fold in the 8 oz container frozen whipped topping with the pudding/water. Because I the french vanilla cool whip was discontinued, I found another recipe for Vanilla Chantilly Cream. Whip on high in a mixer 4 c of heavy whipping cream, 4 tbsps sugar, 2 tsps vanilla until soft peaks form. 3. In a large bowl or glass serving dish, layer brownies, caramel, heath toffee bits, chocolate whipped cream, and french vanilla cool whip. Repeat. Then on top sprinkled a few more toffee bits. Yum was this good.
