G's Tres Leches Cake

Reviewed: May 6, 2013
Oh my gosh, was this good. I took this to a Cinco De Mayo party for dessert. Everyone raved about it. It was a little time consuming to make but it was well worth it. I made it exactly as the recipe stated. However, I did add the toasted coconut on top per another reviewer. I prepared it the day before the party finishing it at 8 pm and then refrigerated it overnight. It was served the next night at about 6 pm. Awesome recipe.

Creamy Parmesan and Sun-Dried Tomato Chicken Penne

Reviewed: Dec. 26, 2012
Amazing! This recipe was simple to make and very scrumptious. I cut chicken breast tenderloins in bite size bites. then, i meted the butter, added a 1/2 tsp of minced garlic from a jar. Then sprinkled the mixture with a tuscany seasoning I had in the cabinet. Followed the recipe from there. Last change was that I added a package of sliced mushrooms the last 5 minutes of simmering. One last note, the recipe was enough for my husband and I plus enough for a lunch. Definitely a five star.

Onion Pan-Fried Pork Chops

Reviewed: Jan. 14, 2012
This recipe was quick and delicious. I had only read a couple of the reviews so I didn't realize that the onion mixture would make more than 2 pork chops so I added 6 buttery round crackers to stretch the mixtures. I will make this again with the crackers as it was wonderful. My husband doesn't care for breaded, fried pork chops but went back for a second on these. I highly recommend this recipe. Simple and fast!

Make-Ahead Mashed Potatoes

Reviewed: Aug. 29, 2011
Used one of the suggestions by KRoggenb and used red potatos. I used this recipe for a big party we had and these were a huge hit. So much so that all the wives at the party wanted the recipe. This is truly a 5 star recipe. Perfect for a holiday when the oven needs to be used for other things!

This was good but definitely not 5 star worthy. However, I could not find fresh blackberries so maybee that is why. Not sure. I will make it again as it was good.

Sweet Ham Roll-Ups

Nothing spectular here. Found it was just a roll up. I will say that the granny smith apples do give this a good taste. Will not make again!

Chocolate Trifle

Reviewed: Aug. 29, 2011
This was so yummy! I can see why awards were won on this recipe. I followed the suggestions of Roxanne323 and did the following. 1. Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares. 2. In a large bowl, combine pudding mix and water, and in a separate bowl whipped 1/2 pint heavy cream and 3 tbsp sugar, then fold in the 8 oz container frozen whipped topping with the pudding/water. Because I the french vanilla cool whip was discontinued, I found another recipe for Vanilla Chantilly Cream. Whip on high in a mixer 4 c of heavy whipping cream, 4 tbsps sugar, 2 tsps vanilla until soft peaks form. 3. In a large bowl or glass serving dish, layer brownies, caramel, heath toffee bits, chocolate whipped cream, and french vanilla cool whip. Repeat. Then on top sprinkled a few more toffee bits. Yum was this good.

My mom used to make these and they are wondeful and easy. However, I don't think you need a full cup of brown sugar.

Apple Dip

Fantastic both in taste and easy to make. However, I would double the recipe as it goes fast! Per previous reviews, Granny Smiths are the best apples to use!

Slow Cooker Pulled Pork

Reviewed: Aug. 29, 2011
I made this twice. Once with the pork tenderloin. It was okay but I found it a bit dry. So I talked to my butcher and he suggested that I try it with a pork butt roast. Holy cow, did it make a difference. I used a 5 lb pork but roast and used enough A&W Root Beer to almost cover the roast. I set the crock pot on low overnight. Shredded the beef (super easy, just fell apart). Then added 2 bottles of BBQ sauce, plus 1 cup of the drippings from the crock pot. Baked in the oven for 1 hour at 250 degrees. It got rave reviews from everyone! I will make this again! One of the easiest things I have ever made.

Nana V's Company Cake

Reviewed: Jul. 14, 2010
I have made this 2 times and it has been a hit each time. The first time I made this was for a bbq that I found out on arrival was also a birthday party. Everyone at the party preferred this over the bakery bought cake. The second time was for an outdoor concert. Everyone who tried this sought me out to say they loved it. I used both strawberries and blueberries on top. Each to prepare. Perfect combination for a great summer treat!

I made these for an outdoor concert at Ravinia. Please look at the serving size. I missed that part before mixing up the cream cheese mixture. These were very good but a little oily. Perfect for the venue that they were prepared for.
