I really enjoyed this a lot. I used ground turkey, and 6 huge (and I do mean huge) peppers cut in half like boats, which is how I always do it. I found that I had enough filling for another 1/2 pepper, which was ok by me! I would spike up the flavor in the filling a little more next time, it was just a touch bland -- but I blame that on the use of turkey in place of beef. I think turkey always needs a bit more oomph in the seasoning. I would also blanch the peppers. I normally do that, and since my peppers were very thick-walled it was needed. All in all, a real keeper!
