Reviewed: Oct. 8, 2009
I substituted a potato, a carrot and canned green beans and corn. Incredible meal and no left overs!

Swiss Chicken Casserole II

Reviewed: Sep. 29, 2009
I followed the recipe as directed, except I chose to pan sear the chicken and then place in the crock pot on high for 3 hours. Supper easy! I felt the flavors were a bit flat and wished the swiss cheese was more prominent. Will try it again.

Tangy Buttermilk Cheese Bread

Reviewed: Sep. 24, 2009
I tried this bread today and despite getting caught out running errands longer than I expected during the first rise time, it came out wonderful I did increase the cheese to a full cup bc I wanted some on the top of the loaf. I also added a tablespoon of crushed garlic.

Oatmeal Sourdough Rolls

Reviewed: Sep. 2, 2009
I have made this recipe twice and we enjoyed them although I don't think they have a strong sour dough flavor. The first time I formed the rolls into two 8" round pans and found that they didn't cook as well in the center. I read through the feedback and altered the recipe the second time...decreasing the butter to just 1/4 cup, using all honey instead of both molasses and honey, and using 2 cups of bread flour 1 c of whole wheat bread flour. The second time I placed them in muffin tins and they were perfect! Will make them this way again!

Marinated Pork Strips

Reviewed: Aug. 29, 2009
I have tried this and it was just okay for us....The flavors didn't seem to compliment each other as well as I would have liked them too and it seemed a bit too salty.

Korean BBQ Chicken Marinade

Reviewed: Aug. 29, 2009
I tried this with some chicken breasts and it was incredible! I can only say that I wish I had chosen smaller cuts of meat to allow the marinade to penetrate better...maybe strips of chicken or something similar. Also next time I will reduce the remaining marinade to a sticky sauce bc the stuff that carmelized on the sides of the baking dish was THE best sauce ever!

Chocolate Mint Cookies I

Reviewed: Aug. 28, 2009
I made these tonight for my boyfriend and his buddies and they turned out exactly like the photos...and tasted great! I did refrigerate the dough for about 10 minutes before I used a small cookie scoop to form them. They look like I put a lot of effort into them. Will use this again!

Elegant Scalloped Potatoes

Reviewed: Aug. 27, 2009
I loved that you used the microwave to speed this dish up however I felt that it compromised the end flavor of the potatoes. I also didn't like the consistency of the sauce. It was too thick and even after thinning it a bit there was just a heavy flour taste. Would recommend using less flour to thicken this. The addition of bacon and green onions made it feel like a baked potato which I liked. I will try this again but I will tweek it a bit...Thanks for sharing.

Teriyaki Marinated Chicken

Reviewed: Aug. 25, 2009
I was rather disappointed in this recipe bc it did not 'penetrate' the meat as much as I would have liked. I followed it as listed...placing ingredients in a ziplock bag and placing in the fridge for 2 days. What flavor we could detect was great...but once you were past the outside of the meat there was zero flavor. I did use breast meat that had the skin removed and they were large. Would recommend thinner cuts or strips to allow for better penetration of the marinade.

Pineapple Bread Pudding

Reviewed: Aug. 24, 2009
I tried this today to use the hardened french loaf that I had forgot about on the counter...and it turned out fantastic! I did cut back on the sugar though but still found it to be plenty sweet. I did not have crushed pineapple so I used a can of chunk pineapple. It looked very nice but the chucks were so much hotter than the rest of the dish and took a while to cool off that I would recommend against this. Thanks for sharing this...I will make it again.

Bruce's Honey Sesame Bread

Reviewed: Aug. 24, 2009
I just tried this bread and it is delicious! I made one small change to it ...added about 1/2 c dry roasted sunflower seeds. Could hardly wait for it to cool off enough to cut into it! Thanks for sharing!

Sweet Pepper Pasta Toss with Kale

Reviewed: Aug. 24, 2009
This recipe was just fair for us...because we found it kind of flat-like it was missing something. I followed it as listed but since many people recommended using more kale I did increase that. To help make it pop we had to drizzle it with a little bit of italian dressing and sprinkle a bit of parmesan on it...only then did we feel like ti was "good." With some tweeking I will make this again but as a side dish to something like chicken. Thanks for sharing.

Beef Barley Soup

Reviewed: Aug. 23, 2009
I just made this recipe and it had a very good flavor. I did replace the peas with corn but followed everything else as listed. Even though I LOVE barley I did find that when it was cooked there was very little liquid left. I will reduce the barley next time as many have suggested. Thanks for sharing...

Wholesome Wheat Bread

Reviewed: Aug. 21, 2009
Just made this bread and wow...did it turn out great! I used the bread machine on a dough setting to do all the work and did the final rise in a greased bread pan. Will make this one again for sure!

I followed this as listed and it was just 'okay' for me. I will give it another go and see if I can't tweak it a little bit.

Squirrel's Great Beef Steak

Reviewed: Aug. 18, 2009
I just LOVE this marinade! The ingredients were ones that we keep on hand and it was simple to throw all the of them into a ziplock baggie to marinade. I only let the meat marinade for about 6 hours bc we were pressed for time but the flavors were still incredible. The only change- I added 1/8 tsp liquid smoke. This one is a keeper for sure!
