Cindy's Awesome Clam Chowder

Awesome recipe, one bottle of clam juice a little water and the juice from 2 cans was plenty to cover veggies. I added a bit of onion and celery, no other spices are needed. Too bad the Knorr soup mix has changed over the years, I had an older package and a new package and the old one actually had chunks of leeks. Also used fat free half and half and finished with a teaspoon of butter.

Mom's Best Pork Chops

Used Penzeys' pork chop seasoning and black pepper directly on chops, delicious! For 10 chops (1/2") needed 3 eggs and 1.5 sleeves saltines.

Easy Cheese Ball II

Green Bean Fries

Makes a lot! Next time I will only make 1/4 to 1/2 lb for 2 people. I did as some others and only cooked for about 30 seconds to 1 minute but I think the published 2 minutes would be better. I used an electric fry pan instead of a deep fryer, it worked great. Will add more seasonings next time.

Cabbage Sloppy Joes

I made the recipe as listed and first left out the sugar and found it to be too tangy, I added 1 t white sugar, 1 pkg equal and 1 T brown sugar, very good! Next time I will just try the brown sugar to taste. I did add more pepper and less salt, as ketchup has a lot of sodium.

Pollo con Nopales (Chicken and Cactus)

Very good! I also used additional tomatillos and only used 1 jalapeno since I have a tendency to make things too hot for most tastes. I added about 1/4 C chicken broth and 1/4 t ground cumin. Serverd on tortillas with mex blend cheese and something new, Rosa Rita green salsa verde, which had just the right kick. Will make this again!

Chicken In Basil Cream

A big hit! I followed the directions except used Panko bread crumbs and didn't have the pimento peppers so used a couple of Tablespoons of chopped sun dried tomatoes in oil (rinsed). Don't leave out the fresh basil, it adds so much to the flavors. Thanks for a great recipe!

Jalapeno-Lime Chicken

I only made slight changes to the recipe, using more minced garlic and pickled jalapenos instead of fresh, and fresh squeezed orange and lime juices. I marinated the chicken for ~8 hours. I used my indoor electric grill (not like a George Foreman grill), and did not have enough room to cook all the chicken so broiled the others. I liked the grilled chicken better and basted it as it cooked, making sure it did not dry out. Served with a tossed green salad, delicious!

Healthier Hot Legs

Very good and very hot! I followed the recipe except sprinkled the chicken with granulated garlic before adding the sauce. I used my favorite hot sauce, Franks. I think next time I will use more of the Franks sauce and less of the chili garlic sauce. I dusted off my electric skillet for this and worked perfectly, giving the chicken an nice gummy HOT coating. Of course it took longer to cook than listed, chicken usually does if you like it well done. Great Recipe!

Aunt Wanda's Turkey Carcass Soup

I cooked the carcass, and pieces that had meat on them (legs, wings) in a pressure cooker with a few cups of prepared organic "Better than Bullion" chicken flavor for 20 min (15 would be enough). The bird was 18 lbs and had been injected with garlic herb marinade and deep fried. Picked and removed bones and added the following: 3 stalks celery and 1/2 large onion sauteed in olive oil until crisp tender, 4 carrots, sliced and microwaved in a little of the broth for 4 minutes, a couple of cups of fresh chopped baby spinach, 1.5 cups cooked rice and half a pkg of frozen peas. Skimmed the fat and heated until the peas were done, DELICIOUS! No seasoning needed to be added except pepper if desired.

Spicy Spaghetti Salad

I used black olives instead of green, added 1/4 chopped red bell pepper and 1 T Johnny's Salad Elegance (aka Salad Supreme) and omitted salt and cumin. Tastes great, would double for a large potluck or picnic. I might try adding salami and cheese chunks next time.
