Pumpkin-Oatmeal Raisin Cookies

One of my favorite recipes! I like to make oatmeal cookies for a healthier cookie choice and these are great. Changes: 3/4 cup dark brown sugar, 3/4 cup coconut sugar ( a new favorite ), and added 1 tablespoon ground flaxseed. I used golden raisins and omitted the vanilla. Also used 2 tablespoons of shortening to replace 3 tablespoons of butter.

Black Bean and Corn Salad II

A fantastic recipe...thanks Jen. I'm a big fan of cumin, so add a bit, and stir in the tomatoes close to serving time. Also was inspired by a recent trip to Puerto Rico where I tasted something similar (but not quite as good), and used chopped fresh mangoes instead of tomatoes, which was a delicious version.

Zucchini Bread II

Love good zucchini bread and liked the fact this one unlike others had less oil to flour ratio. Used 1 cup white sugar and 1/3 brown sugar, but I like everything less sweet. Did add 1/4 cup unsweetened dried coconut too. Stirred in 1 1/2 cups blueberries instead of the raisins, at the end. BTW, I use only the outer 1" inch or so of the zucchini...the bread comes out more colorful...and healthy! In August I don't use the cinnamon, but when weather is cooler, will use it and the raisins. Made 4 mini loaves so they could be shared.

Grilled Zucchini II

As others stated, this is a simple but good recipe. We liked it using balsamic dressing and eggplant in place of zucchini and italian dressing.

Pineapple Stuffing

Our family has been making this recipe for about 10 years. We like to cut the sugar to about 3/4 cup and use butter rather than margarine. Sometimes I add a tablespoon of ground flax seed to this dish ( as well as many other recipes ).

Pineapple Bread Souffle

Great as a dessert, but even so, we cut the white sugar to 3/4 cup. Liked the brown sugar topping...add finely chopped walnuts and cinnamon to it for autumn dessert.

It's Chili by George!!

Gtrat recipe! Usually change a few things in recipes...to this one I subtituted crushed tomatoes for the tomato juice and the sauce.I first browned the onion, and added some needed crushed garlic. Then threw in the chopped pepper for a minute or two. I mixed the ground beef with the sesoning (leaving out the caynne) and browned that. Then mixed all with the cushed tomato. Simmer for two hours, adding the drained beans beans the last hour. Served with corn bread...yum!
