Mark's English Sausage Rolls

My husband is English also and has lived in the U.S. for seven years and misses not only sausage rolls, but meat and potatoe pies and of course fish and chips. He had never heard of using Dijon mustard in the sausage rolls. I only had honey dijon and did not put too much on the sheets as my husband is not a mustard fan. I did use the Jimmy Dean Sage flavored sausage meat and my husband said it needed even more sage so next time I might at 1/2 tablespoon of sage. I also cooked my sausage and onions before rolling them in the pastry and had no problem with grease. Since it is just the two of us, I froze half the batch. We did pour beef Bisto gravy on them - delish! Hubby even loved them with the mustard though I will keep it to a minimum. :)

Mom's Coleslaw

LOVE THIS as does my hubby. The cider vinegar makes it. I also use the pre-bagged cabbage with carrot mix - so easy. Also, I added 1/2 teaspoon black pepper and 1/4 garlic powder. I was never a real coleslaw person but I make this about once a week. Try it!

Old Settlers' Baked Beans

This was great! Hubby and I went to an out-of-state fishing tournament so I made this a few days before we left, froze it, and thawed it a day before I heated it up in a big pot on a Coleman stove while out fishing. Since I do not like bacon, I cooked up 1 pound of boneless pork chops and then cut them into bite size pieces with the beans. We truly had pork and beans for our meal and my hubby's fishing partner loved it too! Will make again.

Creamy Mushroom Soup

Loved it. I made mine with two boxes of portobello mushrooms and 2 onions sliced. I also used beef broth instead of chicken broth (sounded better to me too) and heavy cream. I added lots of garlic powder, salt, and pepper and cooked like directions but also pureed it in the blender and then heated it up again to eating temperature. Loved it!

Roast Sticky Chicken-Rotisserie Style

We LOVED this chicken. The meat fell right off - just gently pulled the leg bone and the whole thing just fell off. We had ordered a rotisserie machine but decided to try this while the machine was in transit and it is every bit as good as the machine cooks it. Right now I have a chicken in my rotisserie BUT last night I mixed all the ingredients and rubbed the chicken and refrigerated because the seasonings together are PERFECT. I did send my daughter this recipe though as she doesn't have a rotisserie.

Alaska Salmon Bake with Pecan Crunch Coating

My husband and I really enjoyed this. I had never even eaten salmon before (I'm not sure why) but we loved the crunchy coating. The first time I made it just like it said. The second time I omitted the mustard (just our preference) and cut the bread crumbs in half so we could taste more of the pecans. It was great and we will make it again.

Crab Stuffed Flounder

I made this for my husband and myself. We LOVED it. He said it was restaurant-quality in taste and appearance. After reading the reviews I also tripled the mustard (I used dijon), crackers (I used Club), worceshire, and then added garlic powder and Old Bay to the crab mixture. I also sprinkled both side of the fish with garlic powder and Old Bay before putting the crab mixture on. It was GREAT!!!
