Easy Banana Bread

This banana bread recipe creates one of the best (if not the best) banana bread I've ever eaten. And that's saying something considering I used to stop and get Amish banana bread once a year and trust me it was delicious. This was even better. I did cut the recipe in half, added walnuts, and kept the middle slightly undercooked (just the way I like it) but I devoured half of the loaf within two days and I don't usually eat very much. The other half was given to some friends for a Christmas present and it disappeared within an hour. Try this, you won't be disappointed. Even the part that was completely cooked was amazing.

Soft Christmas Cookies

These came out pretty good. However, for some reason they tasted like flour. It wasn't obvious, but they did and after I noticed, I had a hard time eating them. Everyone else liked them though. Of course, I fed them to a bunch of college girls who probably never get to eat cookies made from scratch anyways. They are definitely better than store bought cookies, flour taste and all.

Baked Chicken Broccoli and Rice

This recipe is extremely bland. I even like bland food and this was just too much. The pepper didn't really do much for the rice and the paprika wasn't marvelous on the chicken. I've eaten a dish similar to this throughout my life that my parents made when they wanted a quick dinner and I loved it, but this is lacking. It needs more soup and rice and broccoli. The soup has a lot of flavor, but it's so bogged down by chicken and rice that it can't really show off. I'm going to try it with twice the soup, more rice and add broccoli florets next time.

The Mighty Chicken Stuff

This recipe was very good and almost everyone liked it. The only person who did not was my extremely picky younger brother who liked all of the ingredients (except the broccoli) but thought that it was "wrong to put them all together". The only complaint I have is how salty it was. I don't know if that's because I used all our leftover bags of chips that were never going to be eaten, or if it's supposed to be that way. But I used about half the recommended cheese in an effort to make up for the salt difference. I don't know, but it was excellent and I will definitely make it again!
