Baked Macaroni and Cheese with Tomato

We fondly refer to this recipe as "Mac-a-mato" in our house. I was mainly working from boxed & canned goods so I whipped up two boxes of macaroni & cheese as directed & then mixed that with the tomato soup & milk, omitting the cheddar cheese the recipe calls for. & because I was feeling too lazy to make homemade bread crumbs, I mixed up a box of Jiffy cornbread & dumped that all over the top. It turned out delicious & made so much that it fed us meals for days. We'll definitely make this again!

Much better than expected. I made them with smaller red potatoes & without the cheese. They would make great appetizers. Next time we want to try it with sour cream.

Blueberry Crisp II

My boyfriend loved them, me....not so much. We had picked the blueberries from his parents garden a week or so before but had frozen them and when they cooked up they became super tart. You couldn't really taste the mayo but just knowing it was there made it a mental issue for me. If I make this again I'll definitely put some extra sugar in with the berries & I'll probably opt for a more traditional crust. Never hurts to try.

Crispy Mashed Potato Pancake

I used two-day-old mashed red potatoes that had the skins left in, one egg, a heaping tablespoon of flour, green onions from the garden & some salt & pepper. It turned out to make five pancakes but I could only cook three on the first go around because my skillet wasn't large enough for all of them. The first three turned out great & we couldn't eat them fast enough. The last two burnt badly with those time constraints. I'm not sure if something happened to the oil or if it was because I left my boyfriend to watch them. I can't wait to make mashed potatoes again just so I can have these the next day.
