I'm always looking for healthy ways to remake my favorite recipes. Since I love black beans and rice, I decided to give this a try. I used chicken broth, as that's what I had on hand, and I only used one can of beans. Overall I think this was a great first attempt, but that it was a bit soggy. Next time I will try cooking the quinoa, broth, and seasoning in one pot and the onions, garlic, corn, and beans in a separate one, then combining once the quinoa is cooked to the proper texture. I served this with cheddar and sour cream.
