Quinoa and Black Beans

I'm always looking for healthy ways to remake my favorite recipes. Since I love black beans and rice, I decided to give this a try. I used chicken broth, as that's what I had on hand, and I only used one can of beans. Overall I think this was a great first attempt, but that it was a bit soggy. Next time I will try cooking the quinoa, broth, and seasoning in one pot and the onions, garlic, corn, and beans in a separate one, then combining once the quinoa is cooked to the proper texture. I served this with cheddar and sour cream.

Zesty Slow Cooker Chicken Barbecue

I doubled this recipe as I was cooking for a larger group. Because of this, my cooking times were longer than those outlined here. I used fresh chicken instead of frozen, just because I like to make sure I clean my chicken first, and because so many reviewers mentioned that it turned out watery. I also omitted the brown sugar because I was using honey BBQ sauce and was afraid it would be too sweet. This was a total hit with my guests and I will definitely be making it again! The leftovers will be great on BBQ chicken pizza too!

Mexican Casserole

I followed the instructions up until adding the tortilla chips. I decided instead to use the mix as a filler for soft flour tortillas and added a dab of sour cream. I also substituted taco sauce for the salsa, since that was what I had on hand. The flavors were very good.

Baked Ziti II

This is such an easy and delicious recipe for ziti. I used half the mozzarella called for simply because that's all I had on hand. I personally prefer it all mixed together (instead of layered like other reviewers said) because I'm not a huge fan of getting straight up sauce in my mouth (it makes me gag!). So, the fact that it's all mixed together works so much better for my own personal tastes! Visually I would think the layers look nicer because they it's not all pink :)

French Toast Casserole

I really enjoyed this dish. It was SO easy to make and much less messy than real french toast. I didn't measure any ingredients exactly (beside the milk) and it STILL turned out great! Next time I will consider adding more to fill a 9"x13" so it will last a little longer. Mine was also a little mushy, but I think if I added less milk it would be too dry on top. I enjoy bread pudding though, so the texture didn't bother me.

Baked French Fries I

These were so simple and delicious! Next time I will up the seasonings a little so they are stronger. The only change I made was that I turned the temperature down to 350 after flipping them 20 minutes in. They turned out perfect though! Much tastier and healthier than the frozen ones. Thanks for sharing!

Scallops with White Wine Sauce II

I just made this for dinner, but used shrimp instead of scallops since that was what I had on hand. I also left out the lemon juice since I didn't have any in the house. I served it over rotini and it was absolutely delicious! Next time I might add more garlic just because I LOVE garlic!

Black Bean and Corn Quesadillas

The only change I made was substituting taco sauce for the salsa, but that's just because I really don't like warm salsa. I also tried to make it a little healthier by using whole wheat tortillas and used cooking spray instead of the butter. It turned out great and I will definitely be adding this to the rotation! Thanks for sharing!

Campbell's® Quick and Easy Chicken, Broccoli and Brown Rice Dinner

I tried this tonight and it turned out pretty well. Per other reviews I added some garlic and butter when browning the chicken. I also added some more garlic at the end, as well as some salt and more black pepper. I might add this to the rotation, but try it with broccoli cheese soup next time.

Spaghetti Squash Saute

I made this for dinner tonight and my mom and I both loved it! I added a little extra butter and some extra garlic (just because I love garlic) and it was delicious. Next time I might add some cheese too. Thanks for the delicious, relatively easy, and healthy recipe!

My Best Clam Chowder

I followed this recipe exactly as written and was very disappointed with the outcome. Like other reviewers, my soup had no clam taste, if any, and I could only taste the flour and potatoes. I tried adding some seasonings to save it, but to no avail. Thanks for sharing but this was not my cup of tea.

Cheesy Potato and Corn Chowder

I really enjoyed this soup. I omitted the chiles just because I'm not a big fan, and I used two cans of regular corn and one can of creamed corn. I will definitely make this again and will consider adding some chicken next time. Thanks for sharing!

I just finished having this with dinner and it was absolutely delicious! I added a sprinkling of cinnamon with the brown sugar and butter. I also substituted Splenda brown sugar since my mom is diabetic. I will definitely be making this again!

Easy Alfredo Sauce I

This was exactly what I was looking for! Simple to make, yet tastes terrific! My sauce didn't quite thicken, so I added some flour (I didn't measure it, but it was probably around 1/4 cup). I'll never use store-bought alfredo again!

Shrimp and Asparagus Fettuccine

I basically followed the recipe as written and thought it turned out really well! Next time I will increase the amount of shrimp and asparagus and decrease the amount of pasta, just because of personal preference. Thanks for sharing!
