King Ranch Chicken Casserole I

I knew the lady and the famiy who served this at their ranch. My Mother-in Law was a great friend of Mamie Kleberg , the matriarch of the King Ranch. I remember as a young bride, going to have lunch on the ranch and visiting the stables and seeing their great race horses, to say nothing of the Sants Gertrudis cattle they developed. This recipe is pretty true to the original and a good tex-mex meal that kids love!

Roasted Rack of Lamb

This is great and very tasty. I cooked it 15 min. and next time I would add 5 more min. I like my meat rare, but many people have a problem eating what they think is uncooked meat. Ease of preparation is an asset, plus the kitchen smelled so good!

Easy Dump Cake

This is a great basic recipe. Use it as a base for for expirementation with different cake mixes. My family loved this cake! And I am a 66 yr. old who knows how to cook!

Caramel Apple Pork Chops

This was so easy and delish! My granddaughter loved it and my 8 yr. old grandson went and got a bowl of cereal! But after staring at his meal for awhile , he tried it again and ate most of the meat. WHY IT IS SO WELL COOKED?!). His dad is a beef eater. He doesn't understand that pork has to be cooked well done. I loved it and my home smelled great!

BBQ Pork for Sandwiches

I am not a fan of slow cooking, but I decided to pull out my 1970's slow cooker ( what goes around comes around!) and try this recipe. It was great. I added some onion and beer to the liquid and then refridgerated the meat overnight before slicing and putting back in the slow cooker for it's final baptism in BBQ sauce. It sliced beautifully into nice big chunks and my daughter and her family gave it a thumbs up!

wonderful and delicious. i am always looking for recipes to feed my grandkids that they like and this one scored a 10! after 40+ years of cooking and living all over the world, i have tasted many foods, so to please my palate and my grandkids at the same time is wonderful!

i made these for my daughter 's family and their dinner guests. they were eaten as fast as i could make them. even my 2 grandkids liked them and that is saying something! i am going to make a batch of these and freeze them for the next party.
