BLT Salad

This salad is stellar. Mmmm. Disclaimer: I must admit I didn't exactly follow the recipe. So my version was stellar. I only used about 1/4 cup mayo and 1/2 cup plain yogurt.

Peanut Butter, Mayonnaise, and Lettuce Sandwich

I made this sandwich as a joke, because my son and I thought the recipe was hilarious. And yeah, it tastes like white bread with peanut butter, mayo and lettuce...exactly as you would expect. I won't make it again, but we did get a good laugh out of it. ROFL; LMAO; LOL

Quick and Easy Pancit

I love this recipe. It's become one of my "go-to" recipes. My teenager especially loves it, even though he hasn't yet developed a taste for Asian foods. Next time I'd like to try this with baby shrimp added, like my Filipino sister-in-law does hers.

Ravioli with Cherry Tomatoes and Cheese

This tasted a little bland to me, even though I love all the ingredients. It didn't really make good leftovers either (even less flavor reheated). Maybe it would be better with a different ravioli instead of plain cheese.

Parmesan Asparagus

Perfect! My whole family loved this recipe. I did substitute spinach for the escarole, though. This soup reheats well, so make a big batch.

Sticky Monkey Brains

These taste just like cinnamon rolls. I used Kroger brand flaky biscuits and they were great. If you use flaky biscuits you can peel it off in layers and savor the goodness.

Fantastic as-is, although next time I will get a little crazy and add green chilies. My family doesn't typically like quiche, breakfast bakes, etc...but they gobbled this up.

Fantastic! My partner and my son loved this recipe. In fact, my partner says it's his favorite recipe I've ever made. I served this with mushroom-garlic-herb couscous cooked in chicken broth.

Eggplant Parmesan II

Great recipe! I "sweated" the eggplant according to others' directions and placed in two layers, lasagna style, with sauce and cheese between the layers. Despite my having cut the eggplant in extra thin slices (ca. 1/4"), it still could have been crispier. I would definitely bake it 10 min. on each side next time. A little time consuming with the sweating and baking and flipping, otherwise would have been five stars. Might try leftovers as a sandwich on a crusty italian bread.

Easy German Bierocks (Runza)

My family enjoyed these, but I found them a little bland despite the addition of extra pepper and Worcestershire sauce. I baked them and used crescent rolls because I couldn't find frozen dinner rolls. Maybe a ground sausage would be more flavorful.

Penne with Pancetta and Mushrooms

Super awesome! I used 1/2 pkg. bacon, which I just threw in the food processor after cooking b/c I'm lazy. Also added peas and 1/2 red onion, which I highly recommend. Sauteed the sliced onion in with the mushrooms and cooked the peas until water just begins to boil, and added at the very end. Peas are the perfect addition, in my opinion.

Stuffed Green Peppers I

Delicious! These are my favorite stuffed peppers ever. I disagree with the recommendation by some other posters to cut the rice in half, though. I cut it in half and wish I hadn't.

Amish White Bread

Great recipe! As earlier stated, I found less sugar makes a lighter, fluffier bread, just with less flavor. Personally I prefer the denser version that remains faithful to the recipe, but the reduced sugar version (I 1/2'd the sugar, seemed to work well) is good as well. The less dense however, the more it seems to taste just like store bought wonder-bread. This is the first recipe I used to start baking and it's wonderfully easy and rewarding
