Chicken Marsala

Fabulous dish! It is very important to make sure you DOUBLE THE SAUCE. It is so delicious and the recipe makes an amount that just teases everyone. I used 1 cup of Marsala, 1 cup sherry, 2 cups of mushrooms (with the additional butter and olive oil for sauteing) plus gave it half a cup of heavy cream for a Marsala cream sauce. A real people-pleaser, this one!

Taco Seasoning I

This recipe is SO much better than any taco seasoning mix you'd buy in a packet at the grocery. Since it's prepared from pantry staples, it's an easy matter to mix it up. I quadrupled the recipe and put it in a little storage container with the usage instructions written on the front - I used 3 tablespoons per pound of meat, simmered with half a cup of hot water. Perfect! My family likes things spicy, so I doubled the amount of red pepper and used cayenne instead of crushed red pepper flakes.

Old Bay® Crab Cakes

Made these for the first Friday of Lent when we're all feeling a little gloomy, lol. I thought these would cheer us up and I was right. These crab cakes were really delicious and so easy to prepare. I cooked them on my pancake griddle with the slightest bit of oil and melted butter and they turned out golden-brown and picture-perfect. If only I'd taken a picture! Next time, I'll chop an onion into mix to suit my family's taste better. I served these with lemon wedges and a nice horseradishy cocktail sauce.

Amish Breakfast Casserole

Very easy to prepare and oh, so good. Pure comfort food! I accidentally picked up the southern-style hash browns instead of the shredded kind, but those worked just as well, presumably. We had it with bacon this time, but I'd like to try using sausage next time. Because there will *definitely* be a next time.

Mom's Zucchini Bread

There's a reason why this is a five-star recipe and why so many people have saved it: It is simply the best! Moist and delicious, sweet and satisfying, it is absolutely the best reason I know to grow LOTS of zucchini in the garden. We like this for breakfast and for an afternoon snack. Makes a fabulous gift for the neighbors or a hostess. We also found that it freezes very well.
