Pollo Fajitas

Reviewed: Jun. 5, 2010
My first time making fajitas with out the seasoning packet. I was looking for a way to make fajitas without the MSG. I was suprised at the ingredients and thought it may end up bland but it had awesome flavor and it was so juicy. Thankyou for the wonderful recipe!!!

To Die For Blueberry Muffins

Reviewed: Sep. 20, 2009
these were great! turned out nicely. i did mess with the topping a little but i think they would have still turned out great if i had stuck with the recipe. passed the recipe on to my sister and she loved them too. she is in charge of hospitality of the local MOPS group and told the other moms about it. they loved it too. not exactly what i was looking for (i was wanting something closer to the giant muffins you get from a bakery) but still yummy. i used frozen blueberries i picked earlier this year so i lowered the oven temp as another reviewer suggested and they came out perfect.

German Apple Cake I

Reviewed: Sep. 30, 2013
I used 1/2 cup of oil and 1/2 cup of apple butter since I was low on oil. also I cut the sugar down to 1 cup. It was very good the first day, got a little gooey the second day but it disappeared pretty quickly. good snack cake. I will try it with wheat flour next time to make a healthier snack for my kids. I drizzled it with some leftover maple glaze I had and it was very good but sweet and tasty enough on its own. Would be awesome with nuts in it. would recommend cutting apples very small or thinly sliced.

Easiest Peanut Butter Fudge

Reviewed: Dec. 27, 2011
easy and not bad, i think the brown sugar gives it too much of a butterscotch taste for peanutbutter fudge and a little too creamy. peanut butter fudge should be a little dry. wont make this again since my husband is the pb fudge lover and he didnt like it.

Tuna Noodle Casserole from Scratch

Reviewed: Jun. 5, 2010
We are not big fish fans but occationally I can get my family to eat tuna casserole. They LOVED this! It is far better and a lot healthier than the kind with the soup in it. I dont use processed foods and was so happy to find a recipe that uses whole foods. I didnt have to adjust a thing. I did use some slices of swiss on top and mixed in some mozzerella but only because I didn't have enough cheddar. Awesome recipe! My husband even ate leftovers!

it turned out just a little dry. i made it for my son's bday cake. I made a peppermint frosting and it was very tasty. i would make it again but maybe add a little something to help with the dryness.

sooooo good! i love this soup! my baby loved it too! so hearty and flavorful! you cant even tell its vegan, i honestly think adding meat would ruin it! to those who complained of having to add more water- leave the lid on while its cooking. i did and didnt have to add a drop extra.

Lemon Madeleines

Reviewed: May 26, 2014
These were very tasty. Like a lemon sponge cake. I did some using the madeleine pan and the rest in a cake pan since I was short on time. The madeleines were fluffy and light but the batter made in the cake pan was more dense. I think letting the batter sit for an hour allows the air bubbles to form and I just lightly scooped the batter into the madeleine pan. When I put it in the cake pan I just scraped it in and it eliminated a lot of the bubbles. So for those who thought it was too dense, perhaps just be very careful with the batter. But this is my first time making madeleines, just an observation. I thought they were tasty and think they would be even better with the glaze made with lemon juice and powdered sugar as another lady suggested. Thank you!

Northland Cookies

Reviewed: May 19, 2014
I have this recipe in my Betty Crocker book also! I love them and they can be made as drop cookies as well if you like a soft chewy cookie. I like them sliced the old fashioned way and nice and thin so they are crispy. But I like crispy cookies myself! They are great with all different kinds of nuts like walnuts or pecans. I usually leave out the nuts also though because they are always too expensive for me to keep on hand. I wonder how they would be with candied fruits and less sugar?

Streusel Topped Blueberry Muffins

Reviewed: May 6, 2014
great texture, thick batter so they didn't spread out but puffed up high. I used 2 cups blueberries and omitted the topping just because I think topping is messy and I don't care for overly sweet muffins. loved it!
