Coconut Custard Pie III

I substituted cinnamon for the nutmeg. It was difficult to tell when the pie was done. I definitely cooked it for more than 30 min (maybe almost 40min). But when it was done, it was delicious! It was a big hit with my dinner guests!

Banana Pancakes I

Th batter and cooked pancakes smell great. But even though the pancakes appear to be cooked thoroughly, they are mushy inside and are rubbery.

Rhubarb Strawberry Crunch

Delicious! I took the advice of other reviewers and reduced the sugar (I used 3/4 c). I may even use less next time. For the crumb topping, I made half of what the recipe called for, as others had suggested, but I needed to make the other half of the recipe to get a nice crumb layer in a 9x13 pan. So if you're going to use a 9x13 pan, definitely make the whole recipe of crumb topping.

Blueberry Crumb Muffins

Very yummy! I changed the recipe a bit: I added only 1/4 cup of oil and added the 1tsp cinnamon to the batter instead of the topping. For the topping, I used 1/4 cup of flour, 1/3 cup of quick oats, 1/3 cup of brown sugar, and I reduced the butter to 2 tbsp. Also, I used wild blueberries, which are smaller than regular blueberries, and I added some raspberries to make the 1 1/2 cups of berries. I'll definitely be making this recipe again!

Gourmet Mushroom Risotto

Fabulous and so delicious! We omitted shallots, chives, and the salt(since the chicken broth was pretty salty), and reduced the butter to one tablespoon. Thanks for a great recipe that we'll definitely be making again!

Creamy Tomato Soup

Tasty soup! I used 1 29oz can of tomato puree instead of condensed tomato soup and only 1 can of diced tomatoes. I also added some seasoned salt, and omitted the onion and sugar. I think that when I make this soup again, I'll add only 4 oz. of cream cheese to reduce the cream cheese flavor.

Best Ever Blueberry Cobbler

This recipe was great. I really liked the taste of the crust. I doubled the recipe to make it in a 9 X 13 pan. I also used blueberries and blackberries to mix it up a little. I didn't have orange juice, so I used raspberry lemonade and that seemed to work pretty well.
