Avocado Feta Salsa

So yummy! I used white vinegar and left out the onion and garlic. It tastes even better the next day! I will definitely be making this again.

Tiramisu Layer Cake

I made this recipe for a bake-off at work and won! It was delicious and overall relatively easy to make. I ended up changing a few things. (1)As other reviewers suggested, I made twice the coffee/coffee liqueur mixture and I used almost all of it. (2) I misread the recipe and left the whipped cream out of the filling. I think it tasted better because of this, but I ended up having to double the amount of mascarpone, confectioners sugar, and coffee liqueur to make enough for 2 layers of filling. (3)I added the coffee/coffee liqueur mixture in such a way that I avoided the nightmare of the moistened cake layers falling apart when you try to move them. I placed the bottom cake layer on the serving plate, poked holes, and added the coffee/coffee liqueur mix with a tablespoon. I spread the mascarpone mixture on top and then put the next cake layer on. I poked holes in that cake layer and added the coffee/coffee liqueur mixture. Then I spread the filling, placed the next cake layer on, poked holes, and added the coffee/coffee liqueur mixture. After all of this, I put the cake in the fridge for about 45 min-1 hour to let everything set. Since I didn't already have the whipped cream made, I whipped this during the cake's time in the fridge. I pre-chilled the metal mixing bowl in the freezer for about 15 minutes before whipping the heavy cream and after the whipped cream was made, I kept the bowl on ice while I was icing the cake.

Campbell's Kitchen Easy Chicken Pot Pie

Really easy! I gave it 3 stars because I made quite a few changes. Like other reviewers, I used 2 cans of condensed cream soup. I've used many different kinds, but this time, I tried cream of celery and cream of mushroom with roasted garlic. I cooked the chicken with some olive oil, poultry seasoning, and a little chili powder. I also added some potatoes--I cut 4 small/medium potatoes into 1/2 inch cubes, boiled them in water for 5 min (just before they were done, so they would be firm enough to mix), and drained off the water. I mixed all this together with frozen mixed veggies, some black pepper, and dried parsley. A few times when I made this, the poured crust didn't cook evenly. This time, I made drop biscuits with 2 cups of Bisquick and 2/3 cup of milk and dropped/spread them on the top of the pot pie. Then, I covered the dish with foil and baked the whole thing for about 50 minutes at 375F.

Mascarpone Stuffed French Toast with Peaches

With some modifcations, this recipe could be 5 stars. I used challah bread, cut it into 1 inch slices, and then cut a pocket into each slice to insert the filling. I only used 3 tbsp of confectioners sugar in the filling and omitted the lemon zest. I used frozen sliced peaches (~2 cups) to save time and cooked them with 1/4 c of maple syrup instead of the sugar.

Coconut Custard Pie III

I substituted cinnamon for the nutmeg. It was difficult to tell when the pie was done. I definitely cooked it for more than 30 min (maybe almost 40min). But when it was done, it was delicious! It was a big hit with my dinner guests!

Banana Pancakes I

Th batter and cooked pancakes smell great. But even though the pancakes appear to be cooked thoroughly, they are mushy inside and are rubbery.

Rhubarb Strawberry Crunch

Delicious! I took the advice of other reviewers and reduced the sugar (I used 3/4 c). I may even use less next time. For the crumb topping, I made half of what the recipe called for, as others had suggested, but I needed to make the other half of the recipe to get a nice crumb layer in a 9x13 pan. So if you're going to use a 9x13 pan, definitely make the whole recipe of crumb topping.

Blueberry Crumb Muffins

Very yummy! I changed the recipe a bit: I added only 1/4 cup of oil and added the 1tsp cinnamon to the batter instead of the topping. For the topping, I used 1/4 cup of flour, 1/3 cup of quick oats, 1/3 cup of brown sugar, and I reduced the butter to 2 tbsp. Also, I used wild blueberries, which are smaller than regular blueberries, and I added some raspberries to make the 1 1/2 cups of berries. I'll definitely be making this recipe again!

Gourmet Mushroom Risotto

Fabulous and so delicious! We omitted shallots, chives, and the salt(since the chicken broth was pretty salty), and reduced the butter to one tablespoon. Thanks for a great recipe that we'll definitely be making again!

Creamy Tomato Soup

Tasty soup! I used 1 29oz can of tomato puree instead of condensed tomato soup and only 1 can of diced tomatoes. I also added some seasoned salt, and omitted the onion and sugar. I think that when I make this soup again, I'll add only 4 oz. of cream cheese to reduce the cream cheese flavor.

Best Ever Blueberry Cobbler

This recipe was great. I really liked the taste of the crust. I doubled the recipe to make it in a 9 X 13 pan. I also used blueberries and blackberries to mix it up a little. I didn't have orange juice, so I used raspberry lemonade and that seemed to work pretty well.
