Artichoke Spread
I've made this a few times now and it always is a huge hit. I always make it with low fat cream cheese and low fat mayo which makes it an even healthier option and when used as a dip it's a GREAT incentive to eat your veggies, since it pairs so well with zucchini and cauliflower. I usually serve it with a platter of sturdy veg, and pita chips & toasted baguette slices. If you have any leftover the next day just a few tablespoons makes for a healthy, special lunch too!

Lower Fat Banana Bread I
Oh my, this recipe was awesome! I am always trying to healthify old standards and this was a really great version. Like others, I added just a few dashes of spice-cinnamon and nutmeg-and I actually baked it in my new 4-loaf baking pan, and so they baked much more quickly than one standard loaf (about 35 minutes) I was able to make two of the loaves with pecans and two without, for those who don't like nuts. I can't believe how delicious and light the texture. I was afraid it would be too gummy or dense but it was really lovely. I already want to make another batch, because this one is going to be gone very quickly! This recipe is a definite keeper!

Corn and Egg Flower Soup
I have been wanting to try a recipe like this one and finally did it tonight--so simple and delicious! I forgot to add the sesame oil but that was just fine. I also used soy sauce in place of the osyter sauce since I didn't have it on hand and I didn't put in fresh corn, only the can of creamed corn, which was perfect. I halved the recipe (thanks to Allrecipes for the conversion option!) and it made just enough for two. I will definitely will be making this again!
