Byrdhouse Blistered Cherry Tomatoes

This recipe is really easy and delicious. I used olive oil, sliced garlic and then the fresh basil 'paste' you can now find in a tube in the produce department. This is a great recipe for using up extra tomatoes.

Lemon Icebox Pie I

Note to self -- next time don't try to whip the meringue topping by hand.... use mixer. Yes, I tried it by hand but before I got it to peak my arm cramped up. Stuck it in the over anyway. Surely not as pretty as it was intended to look, but still tasted great.

Chocolate Cream Pie I

Well, I must confess I am the world's WORST baker. Seriously, even if I am cooking ready made cookie dough or a cake from the box, somehow I find a way to mess it up. That said, I was so delighted to find dessert recipe that turned out great, no matter how I butchered it. I did add an extra square of chocolate. I mean, what's not to like?

Half-Time Nibblin' Dijon-Ranch Chicken Wings

I've been looking for a wing recipe that is not deep fried. This one is awesome. Who would have though ranch dressing would be the hidden secret to big flavor? These were also super easy to make. I might try this same recipe to make chicken strips for the kids. Go Patriots!

Bacon for the Family or a Crowd

This method of cooking bacon is a keeper. It's way easier that frying up multiple batches in a frying pan. It also cooks them up perfectly and crispy (something the microway is not good at). It also frees up your cooktop and your hands for other stuff.

Beef Stroganoff III

This was fast and easy to make. I used a sirloin steak cut up into strips. I also used fresh mushrooms rather than canned. Since the meat was fairly tender to begin with, I skipped the 'simmer for one hour' step. My dish was ready in about 30 minutes. I served it over hot egg noodles.

Fried Razor Clams

This recipe is the real deal if you are a razor clam fan. We dig up Razor Clams down on Long Beach Washington. This is the recipe we use to fry up the day's catch when we get back to the condo. You can serve with butter, tarter or cocktail sauce.

Easy Slow Cooker Carne Guisada

This is a terrific dish when you are feeding a crowd. I make these along with some shredded chicken when I am hosting a 'taco bar' party. I take the time to remove as much fat as possible.

Prosciutto Wrapped Asparagus

Really easy. Really good. This is a must have at any party when asparagus is in season. Be sure to buy the thick asparagus as I don't think this would work well with the thin ones. I did this with zucchini (I cut them into wedges) and it turned out great.

Fig and Olive Tapenade

For whatever reason, when I see 'fig' in the ingredients of a recipe it always scares me a bit. But then when I try the finished product, it's 10 times better than I expected. This dish was very, very good. I served along side some soft french cheeses (brie, camembert). Yum.

Blue Cheese and Pear Tartlets

AWESOME. No really, these are seriously awesome. Not sure what it is about the combination of blue cheese and pear, but it really, really works. This appetizer is outstanding with a glass of Savingnon Blanc.
