Salmon Cakes Inspired by Chef Bubba

Reviewed: Oct. 4, 2010
These were really good! I didn't have shrimp, so I just used precooked salmon. I also didn't have bread crumbs, so I just added crushed Ritz crackers. We ate leftover as sandwiches (placed cake between a few pieces of bread).

Zippy Summer Shrimp

Reviewed: Aug. 8, 2010
Easy, Tasty and Impressive. What's not to like?? These were a huge hit at a fund raising dinner I helped out at. These shrimp are great as an appetizer, over rice or pasta.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Aug. 8, 2010
This is a great recipe. I made it as is and it was great. Next time I might try Halibut instead of Talapia...

This dish was delicous. The marinade and baste added lots of flavor. This one will definitely saved in my recipe box for repeat use.

This was a great recipe -- just like the shrimp cocktails we had in Cabo San Lucas. Great with chips!

Lower Fat Banana Bread I

Reviewed: Mar. 29, 2010
Made this over the weekend (had 4 very brown, very soft bananas sitting on the counter). This recipe turned out great -- you can't even tell it's lower in fat. Just as moist as other more fattening versions. I did add 1/2 teaspoon of vanilla to my batter.

This soup is fantastic. Lots of flavor (who doesn't like bacon?!) and plenty filling. I will definitely make again.

Apricot Pork Tenderloin

Reviewed: Nov. 9, 2009
This was very easy to make. I didn't bother with rubbing butter on the pork. Instead I sprinkled salt, pepper and some fresh rosemary on it prior to baking. For the sauce, I used fresh garlic, sherry and apricot jam. I didn't bother with the honey. My family really liked this dish. I served with roasted potatoes and sautéed sugar snap peas.

Best Butternut Squash Soup Ever

Reviewed: Nov. 9, 2009
This soup was very tasty, very tasty. I found pre-peeled, pre-cubed butternut squash at Costco that made preparation super easy; it was in the cold room where you find lettuce and sugar snap peas.

Sweet, Sticky and Spicy Chicken

Reviewed: Nov. 1, 2009
This was really easy and good. I steamed the broccoli seperately and added it to the end. I also coated the chicken with flour prior to cooking and added 1/2 cup of chicken broth to the sauce when cooking. Overall very good. Would definitely make again!

Rocky Road Ice Cream

Reviewed: Jul. 28, 2009
This recipe is outstanding. After trying a few different recipes with lackluster results, I tried this one. My family loved it! Best ice cream ever was their response. I'm going to see if I can create a 'vanilla version' by omitting the cocoa powder.

BREAKSTONE'S Creamy Sour Cream Chicken Enchiladas

Reviewed: Apr. 24, 2009
These enchiladas were super easy and good. I had roasted a whole chicken Sunday and had leftover meat. So this was a great to make it into a meal. Next time, I think I will only use half a can of soup and perhaps increase the sour cream. I also ended up with only 7 enchiladas instead 12, but I made them really big. The 7 I made filled up the entire pan. One each was enough for dinner.

Mom's Big Burgers

Reviewed: Feb. 28, 2009
These were really good. I added a few dashes of worsheshire sauce, but other than that didn't change a thing. I served with sliced tomatoes, avocados, onions, pickles and lettuce. I had french fries on the side.

Don Julio Margarita Legendario

Reviewed: Feb. 23, 2009
I served this over the weekend at my senoritas and margaritas oscar party. They were a huge hit! The girls all love it. They said it reminded them of a'top shelf bartenders' margarita'. I save time, I squeezed the lime juice ahead of time and mixed up a big batch of these when everyone was ready for a refill.

Hunter Style Chicken

Reviewed: Oct. 27, 2008
This was great. I used canned tomatoes (Muir Glen 28 oz can) and it was great. Got bit thick at the end of cooking (I kept it on the stove for 3+ hours), so I added broth and wine to thin it out.

Cheesy Ranch Chex® Mix

Reviewed: Sep. 23, 2008
I made this to munch on during the football games this past Sunday. Everyone loved it so much I had to make a second batch during half time. My kids have asked that I put some in their school lunches as snack. I'm going to add some whole almonds to the mix so to add some additional 'brain food.'
