Key Lime Pie VII

Easy, easy, easy... I am not very good (okay... I stink) at making pies (too runny, not runny enough...pie crust disasters). This recipe my friends is heaven sent. Easy to make, fool proof, not to expensive, you can make a few in a moment's time to feed a big crowd, and it tastes great. I strongly recommend if you are looking for a fool proof dessert to share at a gathering.

Cobb Salad by Avocados From Mexico

I am always looking for interesting salads that are substantial enough to be a meal for my family. I buy that 7 pack of romaine lettuce at Costco or Cash and Carry...so making it through that much lettuce in a week's period is a challenge. I really liked the addition of corn (I used fresh corn). I also threw in some black beans to boost the nutrition.

Chicken BLT by Avocados From Mexico

This is in my opinion the perfect blend of flavors...although admittedly, what dish isn't better when you add avocado? I make this same sandwich often without the grilled chicken.

Magic Cookie Bars II

Mmmmmmmmmm.....so, so good. These bars are delicious. As an added plus, they are nearly impossible to mess up. I am a terrible baker so I love it when a recipe for a baked treat doesn't 'out' me as someone who is too impatient to closely follow directions.

Brooke's Best Bombshell Brownies

Full disclosure...I didn't make these but I did eat them and they are amazing. I'm not a huge brownie fan...but I loved these. Don't panic if they are super moist when you pull them from the oven...the brownies I ate were from a baking pro which gave me confidence they they were cooked through. Sonja, the baker, added mini marshmallows to the top which added to the taste, visual and texture appeal. I am always looking for a great recipe for brownie sundaes....and I'm pretty sure my search is over.

Jicama Mango Salad with Cilantro and Lime

I served this with fish tacos last night. My family hadn't had jimica before. My son described it as 'apple meets celery.' Having the mango, jimica, jalapeno and lime together was a great flavor. The salad kept really well overnight.

Cedar Planked Salmon

Fantastic recipe. My husband loves to fish for salmon...in rivers, lakes and the sound....so as you can imagine we have prepared salmon every which way you can imagine. I can honestly say this method and recipe is among the best.

Panko-Breaded Fried Razor Clams

My family loves to go razor clamming down on the coast of Washington State. This is our go to recipe when catching our limit. We made a big batch of fried razor clams for dinner that night with half our clams, and then a pot of clam chowder for dinner the next night. Panko crumbs are essential for this recipe if you like crunch.

Oven-Roasted Asparagus

Homemade Nacho Cheese Sauce

This is such a great recipe if you are making nachos for a crowd. For the past few years I made this a staple at my football parties. I make a batch, and then make it a part of my 'nachos' bar. I have chips, chopped veggies (onions, tomato, olives, jalapeno peppers, bell peppers, etc.), cooked ground beef and turkey with taco seasoning, guacamole, sour cream and salsa. The guests can each make their own custom batch of nachos to meet their preferences and creativity. I keep it warm in a crock pot so it stays liquidey.

Vintage Lemonade

Great way to use up a huge bag of lemons from Costco. The kids loved this lemonade over ice. For the festive adults at our party, we added a bit of lemon flavored vodka and it was a huge hit as well.

Chef John's Turkey Burger

Thanks Chef John. I am always looking for clever ways to sneak ground turkey into my family's diet (as a substitute for beef or pork). They loved these burgers. Great flavor, great texture. I did bail on the ground almonds since not sure where I would find this ingredient at the store or use this ingredient again.

Pineapple Grilled Pork Chops

I used this marinade on chunks of pork tenderloin I used for pork kabobs. Turned it great. Didn't have fresh pineapple so I substituted pineapple juice from a can instead.
