Insanely Easy Vegetarian Chili

While I wouldn't call this "insanely easy" because there is a lot of vegetable chopping involved, it is absolutely delicious. While I thought this would taste like "vegetable soup with beans", the veggies all take on a "chili-esque" flavor. Everyone loved it. I did add a second can of kidney beans and barely squeeked out six servings. (Perhaps it serves eight if each bowl only contains one cup of chili.......)

Chocolate Chip Shortbread Cookie Logs

Divine! Shortbread is heaven on its own, but add chocolate---PARADISE. I didn't even decorate the ends (drizzle or dip), and they were still great. Instead of rolling them into "ropes", I patted/rolled the dough into a 2-inch wide rectangle, then cut it every half inch, making "matchsticks" instead of "ropes". I will definitely make these again!

Bruschetta II

Very very yummy! The proportions are off--you'll have way too much pesto than needed for the amount of tomatoes here. I guess that means I chop more tomatoes and we have it again tomorrow night! I only used about half the almonds and was happy with the texture they added. Also, if substituting dried basil for fresh, use 1/3, which would be 1 teaspoon in this recipe. This is also a great way to sneak spinach onto the menu.

Cherry Chocolate Cake

I made this in a bundt cake pan and topped it with a simple chocolate ganache. It was beautiful! A great combination of chocolate and cherries. Neither the cherries or the chocolate were overpowered by each other. A very delicious and easy cake.

Mushrooms with a Soy Sauce Glaze

So simple I can't believe I hadn't thought of it before, so a huge thanks to the submitter. Delicious!!!!! I tripled the recipe to serve eight, but we all could've eaten more! I will definitely make these again.

One of our favorite new recipes. So fun and easy. I have a mandoline that makes super-thin slices--essential for good chips. I cook these directly on a sheet of parchment in the microwave--works great.

Cheesy Sweet and Savory Spuds

These potatoes were delicious! I will cut back a bit on the pepper next time though. I stirred the cheese right in--didn't melt it on top as called for. This recipe is excellent for when you're serving mashed potatoes sans the gravy! They stand well on their own!

Roasted Asparagus and Yellow Pepper Salad

This is fast becoming one of my favorite salads! A few changes I've made are: slivered almonds instead of sliced (more "substance" there), shredded parmesan cheese instead of grated (the grated cheese kind of "clumped up" when you mixed it in), a longer cooking time (about 18 minutes total) to get the veggies tender AND I cut the dressing recipe in half since it doesn't take much, especially since the veggies are already covered with olive oil. This salad takes some great ingredients and combines them in a way that makes them all BETTER!

Honey Coconut Salmon

We cook this salmon on the grill and love it that way. Slightly sweet with crunchy coconut. Before pouring on the marinade, I set a bit aside to serve on the side as a dip or spread. That way each person can eat the salmon as sweet as they want. (Just a note about the marinade--since it is butter based, it will solidify upon refrigeration.) An excellent recipe that I'm so happy to add to my recipe box.

Divine! I always use tomato juice in lieu of juicing the tomatoes (I don't have a juice extractor) in this recipe. And for tonight's dinner party I added little salad shrimp. It's delicious, refreshing and GONE way too soon.
