Chicken Breasts with Balsamic Vinegar and Garlic

Excellent recipe. I let the sauce reduce down a bit more--probably 10 minutes total. I will be making this again and again. It's weeknight simple, yet company worthy!

Brown Sugar Meatloaf

Bland and dripping with fat. A few bites had a bit of sweetness, but the brown sugar/ketchup "topping" turned so soupey that it was hardly noticable.

Kentucky Hot Brown

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Very good. A quick throw-together meal that's fit for company, too. Although fresh tomatoes taste better, canned diced tomatoes work well, too. I've also added a small can of sliced black olives--very good.

Mandarin Orange Chicken

The first time I made this, I didn't really care for it. (I didn't like the warm oranges.) Well, I forgot that I had already tried it, and fixed it for dinner again! The second time I really really liked it! I have no idea what the difference was, but I will be fixing this again. I served this with pecan rice from this site and green beans almondine. Nuts in every dish--kind of fun!

Creamy Artichoke Pasta

Good, but not great. I mixed plain old pasta sauce with the leftovers for the next day. Everyone liked it, but again, it was nothing special.

Pecan Rice

I think brown rice needs to be cooked with 2-1/2 cups water per 1 cup rice, so I adjusted it accordingly. I toasted the pecans after chopping them. This was excellent--the pecans adds a great crunch! I will be making this again and again.

Chocolate Chip Shortbread Cookie Logs

Divine! Shortbread is heaven on its own, but add chocolate---PARADISE. I didn't even decorate the ends (drizzle or dip), and they were still great. Instead of rolling them into "ropes", I patted/rolled the dough into a 2-inch wide rectangle, then cut it every half inch, making "matchsticks" instead of "ropes". I will definitely make these again!

I must disagree with other reviewers who said this wasn't too sweet. It's quite sweet and rich. Too many raisins, too. Maybe 1 cup would be enough. Not the sour cream raisin pie recipe I'm seeking...

Cherry Chocolate Cake

I made this in a bundt cake pan and topped it with a simple chocolate ganache. It was beautiful! A great combination of chocolate and cherries. Neither the cherries or the chocolate were overpowered by each other. A very delicious and easy cake.

Focaccia Bread

Very good and very fast. You can easily fit it in with the regular dinner preparations. Don't overbake--it toughens the bread.

Peanut Butter Noodles

I'll experiment with this one. There was too much peanut butter and it seemed to be missing something, but the whole family enjoyed it. The udon noodles were great!
