Baked Asparagus with Balsamic Butter Sauce

This was very good, but still can't beat my regular roasted asparagus recipe. There was no balsamic vinegar taste to this, just soy sauce.

Avocado Tacos

Yummy meatless tacos! I love the hint to warm the corn tortillas in the oven. I thought the only way to get them not to tear was to give them a quick dip in hot oil. I will be using corn tortillas more from now on.

Quick Gnocchi

Very good. I've never made gnocchi from scratch so I don't know how much quicker/easier this recipe is. After cutting, I did "roll each piece down a fork" to get those sauce-holding grooves. Fun recipe to make with kids.

Quick Chiles Rellenos Bake

This recipe calls for 12 ounces of canned whole green chiles. I only found the chiles in 7 oz. cans, so I used two (14 oz. total). It wasn't enough. Next time I will use at least four cans. These were easy and very tasty. I think plain monterey jack cheese would work fine.

Insanely Easy Vegetarian Chili

While I wouldn't call this "insanely easy" because there is a lot of vegetable chopping involved, it is absolutely delicious. While I thought this would taste like "vegetable soup with beans", the veggies all take on a "chili-esque" flavor. Everyone loved it. I did add a second can of kidney beans and barely squeeked out six servings. (Perhaps it serves eight if each bowl only contains one cup of chili.......)

Easy Roasted Red Pepper Hummus

Excellent recipe. I hesitated to purchase the huge jar of tahini at $5+, but now have confidence that it will get used up just from this recipe alone. I only added about 3 tablespoons fresh lemon juice, and it's perfect. By the way, garbanzo beans and chickpeas are the same thing.

Amazing Sun-Dried Tomato Cream Sauce

Very easy and divinely delicious. Unfortunately, with all that fat, this isn't something I will be making very often. Great recipe to keep in the file if company drops by for dinner though. The whole family loved it.

Maple Salmon

This recipe is divine! The maple glaze would be wonderful on other meats, too. I'll be trying it on chicken next. I used real maple syrup (not just maple flavored) and doubled the glaze recipe since my salmon piece was around 1-1/2 lbs. I didn't think it would be fully cooked in only 20 minutes, but it was!

Creamy Rice Pudding

I was one of those people who thought rice pudding was a dessert Grandma would fix. I tried this recipe because my husband (despite his age) likes rice pudding. Boy, was I wrong! This is excellent. Sometimes I'll cook extra rice at dinner, just so there's leftover rice for this dessert. It's very good, very comforting. And I'm not even close to being a Grandma!
