Easy Chocolate Bundt Cake Glaze

Quick, easy, and sweet. This same recipe is one I use as a filling in a bar cookie, but I never thought to use it on its own. I've also used this as a filling between chocolate layered cake, which was divine. One negative as a glaze--using a can of expensive sweetened condensed milk, when there are other glaze recipes out there that cost much less to make.

Frosted Grapes

This is a really fun idea, and the kids loved it. I do feel a bit guilty adding so much sugar to a healthy food that the kids love already anyway, but it's fun for an occassional treat.

Good Old Fashioned Pancakes

Amazing Pecan Coffee Cake

Melt in your mouth" is right! This was fall-apart-tender, yet moist at the same time. I did 1-1/2 times the topping recipe, which was perfect. I had no problems with it sinking into the cake. Baking time was 45 minutes.

Balsamic Tortellini

I added regular bacon, and more than the recipe called for. I also threw in some sun-dried tomatoes, because they make EVERYTHING taste better. This was very good and I would probably make it again.

Brown Sugar Cookies II

I added M&Ms and made these as a drop cookie, instead of a refrigerator cookie. They were very good, but I do prefer all butter cookies over those with shortening. I don't know that I would make these again---they weren't bad, but there are so many cookie recipes out there that I like better.

Slow Cooker Lasagna

I would probably tweak this recipe a bit for next time. I loved the ease of cooking it in the slow cooker, but felt that something was lacking taste-wise. Perhaps it was the sauce...... Easy though--I'll work with it.

Honey Ribs

I'm not really a "rib person" because there's usually a lot of work for a little bit of meat when you eat them. This recipe changes that. There is no work to eating them, since the meat literally does fall off the bone. I followed the recipe exactly as written, and my family of six found them delicious. I think ribs will be on the menu more often now......

Cinnamon Cookies II

I followed this recipe to a T, as I wanted to taste the cinnamon "unadulterated", not with the addition of other spices. Don't let their plain appearance fool you--very very yummy!

Tina's Shortbread Chocolate Chip Cookies

Using a cookie scoop, then flattening each cookie slightly, these produce beautifully uniform cookies. I, too, used mini chocolate chips, as well as a splash of vanilla extract, as I just thought it needed it. I used hazelnuts in lieu of walnuts. A bit "fancier" than chocolate chip cookies. Afterall, it's shortbread!

Chocolate Snaps Sugar Cookie

Even after chilling the dough for a few hours, it was softer than I expected, BUT it still worked great. I dipped the rolled dough in "big sugar" instead of regular granulated sugar, as I like the sparkly look and extra crunch it provides. These are excellent. Oh--I used an additional 3 Tablespoons butter instead of margarine, as the recipe states. Worked just fine.

Mexican Mole Sauce

Never having tasted "real" mole sauce, I didn't know what to expect. I really thought this would taste like doctored-up tomato soup, but it was very good. I would make this again.

Five Flavor Pound Cake II

I used orange extract instead of lemon. The coconut extract "took over", so I would cut back on that next time. The cake kind of rose funny, like it needed a bit more leavening.

Spinach and Sun-Dried Tomato Pasta

I used oil-packed sun-dried tomatoes and chicken broth, which I let reduce down. This was a great way to get spinach onto the plate. The pine nuts were a great addition. Good standby recipe when marinara just won't do.

Roasted Chicken with Risotto and Caramelized Onions

I would call this "Risotto with chicken and onions" since everything else takes a back seat to the rice. Everything, except the balsamic, that is. It was a bit strong on the balsamic--it was by far the dominant flavor. Next time I will tweak the ingredients a bit.

Chicken Breasts with Lime Sauce

This was good, but not what I expected. The sauce is basically just butter with some dill and a tiny bit of lime juice. The recipe says (after removing cooked chicken to a platter) to drain grease from the skillet---there is none left! Two tablespoons of olive oil get soaked up pretty quickly by the breaded chicken! The lime juice sizzles and almost immediately evaporates (in the form of steam) before you can add the butter. So you end up with dill flavored butter--not a bad thing, but not quite what I was hoping for.

Like others, I cut the butter in half. This was divine. Everyone loved it. I used chicken tenderloins. I will make this again and again.
