Is it possible for a bread to be "too fluffy"? Maybe I let it rise too long, but it was definitely too fluffy. The middle couldn't handle the pressure of the bread knife cutting through the crust. I'll try it again and watch the rise time. Delicious, but with faults.

Creamy Chicken and Rice Soup

After reading a few reviews I made the following changes: 1 cup rice, all chicken broth, 1/2 cup butter, only 4 cups milk, sauteed the veggies with garlic, and cooked for 45 initial minutes. It was a good basic recipe. Nice change from chicken noodle soup.

Don't Knock it Until You Try it Zucchini Chocolate Banana Nut Milkshake

Delicious. Divine. Great way to use the summer bounty of zucchini. It processes faster if you chop up the frozen lump of zucchini and pre-chopped the bananas before freezing.

Refried Beans Without the Refry

Okay, this was really really good. And talk about easy. Gotta plan ahead though. But it does make a ton, so you'll have plenty of leftovers for the next few days. My family is now disappointed if we have frijoles from a can.

Creamy Hot Cocoa

Agreed--it's too sweet. I am also looking for hot chocolate that's a bit thicker. Not pea-soup thick, mind you, but certainly thicker than water. Good, but not great.

Sour Cream Apple Pie Deluxe

Yummy change of pace from good old apple pie. The crust edge did get too dark, even after covering with foil. But that filling definitely makes up for it.

Paprika Chicken with Mushrooms

Good solid recipe, but I did follow the top reviewer's tips. Next time I would chop the onions; the rings were a bit too much. I deglazed with chicken broth only, then thickened a bit with cornstarch/cold water.

Buffet Meatballs

Key Lime Pie VII

Easy and yummy--what more could you ask for? I was a little nervous at the short cook-time, but with a mere 10 minutes, and then chilling, it was completely set-up inside. I didn't see many "tiny bubbles" in the surface--I wouldn't use that to gauge the doneness. Just make sure your oven is at the right temp and follow the directions. Oh, it's surprisingly rich despite the absence of eggs. 1/8 piece is more than enough.

Yummy. Served it on various crackers. Subbed dill relish for sweet, as that's what we use around here. The curry was a nice touch. Next time I'll add just a bit more.

Three Amigos Salad

Very refreshing. The creaminess of the avocado is there, but the taste is overwhelmed by the mango, which is not a bad thing at all. There are probably better ways to use a precious avocado, but this way isn't wasted either. I would make this again.

Avocado Dessert

We all tried it and were surprised at how good it tasted, yet no one wanted to go back for more. We didn't care for it on vanilla ice cream--the flavor got lost. Would I make it again? I don't know, but I'm really glad to have tried it once.

Cream of Mango Soup

I found a great price on mangoes, and had "soup" in mind when I bought them. This recipe was good. The lemon really comes through. It is screaming for some sort of garnish--something to add texture. Yummy for summer.

Monkey Bread Muffins

Making monkey bread in muffin cups is built-in "portion control". Quick and easy. Would be fun to make with the kids. Much better warm, than cold, but perhaps that goes without saying.

Chewy Peanut Butter Brownies

I threw in some mini chocolate chips (they don't sink in batter like regular ones do), then covered it with ganache after cooling. Delish! They bake up nice and tall, too.
