Mom's Dill Sauce

Reviewed: Apr. 1, 2003
A great alternative to plain old tartar sauce. This recipe makes more than enough. Next time I'll cut it in half. Very tasty!

Layered Chicken and Black Bean Enchilada Casserole

A good main dish, but not a great one.

Pan-Fried Asparagus

Reviewed: Apr. 1, 2003
Simple and delicious way to prepare asparagus. Next time I'll cut down on the butter and/or olive oil--it really didn't need that much. Yummy!

Strawberry Spinach Salad I

Reviewed: Mar. 31, 2003
What a great salad. Impress the company or just dress up dinner any night. My kids even like this--spinach and all. Definitely a keeper!

Jamie's Cranberry Spinach Salad

Reviewed: Mar. 31, 2003
This salad is EXCELLENT. Everyone likes it, even those who "don't like spinach". (I find that toasting the almonds in the butter is unnecessary. Toast them, yes, but you won't miss the butter.) A great company salad, as well as for anyday.

The Old Boy's Strawberry Pie

Reviewed: Mar. 31, 2003
My family liked this one more than I did. It was a good strawberry pie, but not a great strawberry pie.

Whipped Shortbread Cookies

Reviewed: Mar. 31, 2003
Light and buttery! I didn't use the cherries--just made them plain. I think these would be beautiful piped with a large star tip or shaped with a cookie press. Very delicious.

Camp Cornbread

Reviewed: Mar. 30, 2003
Very good flavor, but the texture was TOO light and crumbly (yet still moist). I like my cornbread to really BE THERE--thick, dense. It was very quick and easy, but I won't be making it again.

Annie's Fruit Salsa and Cinnamon Chips

A great summery appetizer. Easy and delicious. Could almost be served for dessert, also.

Baked Tomatoes Oregano

Reviewed: Mar. 30, 2003
These looked delicious, but tasted a bit bland. I would try them again, adding more oomph next time.

Vegan Black Bean Soup

If you love black beans, you've got to try this recipe. Thick, hearty and delicious! I will make this again and again.

Pastry Cream

Reviewed: Feb. 23, 2003
I'd give this recipe 6 stars if I could. The flavor is wonderful and the texture is absolutely perfect for a filling. I kept this in my fridge for days and it never "watered out" like puddings tend to. This is definitely THE recipe for pastry cream.

Raspberry Lemon Muffins

Reviewed: Feb. 5, 2003
These muffins are divine! Lower in fat, but certainly not lacking in flavor. Delicious for anyday, but beautiful enough to give away, too. I do have to add to the baking time--about 24 minutes total. I always double the recipe, but don't get quite 2 dozen. This recipe is a keeper.

Pecan Sour Cream Pound Cake

Reviewed: Jan. 26, 2003
Dense and moist. The batter was delicious (tasted like melted butter pecan ice cream). The finished cake was good, but not five star in my book.

Best Marinara Sauce Yet

Reviewed: Jan. 26, 2003
I substituted chicken broth for the white wine. It was quick, easy and very good the first day. But absolutely wonderful if the ingredients get a chance to "marry" in the fridge for a few days. I'm going to make this in bulk, let it "age" then freeze it so I always have some on hand. Delicious!

Orzo with Parmesan and Basil

Reviewed: Jan. 17, 2003
I omitted the basil and had a wonderful side dish. The kids loved it and it was quick and easy. A great "base recipe" as so many things could be added for a totally different taste.

Zesty Tomato Soup for One

Reviewed: Jan. 16, 2003
What a wonderful idea. I made a few changes: one whole tomato (because it was a Roma), a garlic clove pureed with the onion and tomato and because I prefer Cream of Tomato soup, I stirred in 1 Tablespoon heavy cream just before serving. Excellent lunch idea for moms who don't want PB&J!

Very good soup. But with the high fat and calories, I won't be making it on a regular basis.

Easy Salmon

If only it were as good as it were easy...... I was disappointed, especially after all the rave reviews. Back to the grilled salmon we go.
