Honey Coconut Salmon

We cook this salmon on the grill and love it that way. Slightly sweet with crunchy coconut. Before pouring on the marinade, I set a bit aside to serve on the side as a dip or spread. That way each person can eat the salmon as sweet as they want. (Just a note about the marinade--since it is butter based, it will solidify upon refrigeration.) An excellent recipe that I'm so happy to add to my recipe box.

Swan's Summer Soup

Divine! I always use tomato juice in lieu of juicing the tomatoes (I don't have a juice extractor) in this recipe. And for tonight's dinner party I added little salad shrimp. It's delicious, refreshing and GONE way too soon.

No Crust Strawberry Pie

Unfortunately, you can't escape the "after-taste" from the sugar-free products. Essentially, this was just a molded gelatin salad with strawberries in it. Looked beautiful, but I didn't feel like I was eating "no crust pie"---it was jell-o! As for the sugar-free ingredients, if that after taste doesn't bother you, go for it! I won't be making this again, though.

Different, but not as different tasting as you'd think. It truly is hot and cool at the same time. What a great alternative for people with tomato allergies! Very good!

This salad is EXCELLENT. Everyone likes it, even those who "don't like spinach". (I find that toasting the almonds in the butter is unnecessary. Toast them, yes, but you won't miss the butter.) A great company salad, as well as for anyday.

Whipped Shortbread Cookies

Light and buttery! I didn't use the cherries--just made them plain. I think these would be beautiful piped with a large star tip or shaped with a cookie press. Very delicious.

Camp Cornbread

Very good flavor, but the texture was TOO light and crumbly (yet still moist). I like my cornbread to really BE THERE--thick, dense. It was very quick and easy, but I won't be making it again.

Pastry Cream

I'd give this recipe 6 stars if I could. The flavor is wonderful and the texture is absolutely perfect for a filling. I kept this in my fridge for days and it never "watered out" like puddings tend to. This is definitely THE recipe for pastry cream.

Raspberry Lemon Muffins

These muffins are divine! Lower in fat, but certainly not lacking in flavor. Delicious for anyday, but beautiful enough to give away, too. I do have to add to the baking time--about 24 minutes total. I always double the recipe, but don't get quite 2 dozen. This recipe is a keeper.
