Enchiladas Suizas

We made this using ground beef AND chicken. I didn't think the ground beef would be very good with the sauce....but it was our family's favorite! To make it less messy, I didn't dip the fried tortillas in the sauce but just spooned some inside and poured the remaining on top. Delish!

Amazing Butternut Squash

I still prefer the old method of cooking and smashing with brown sugar and butter. This seemed to not have a lot of flavor. The texture was good. Loved the topping. But I'll stick to the simple old fashioned way.

Minnesota Mail Carrier Cookies

These cookies are REALLY good! Super easy and fun to make. I was about 1/3 C short on brown sugar and used white sugar to make up the difference and they turned out good. Used pecans instead of walnuts and they worked great! It's a keeper!

Vegan Fajitas

Simple and easy ingredients. The red wine vinegar is what gives it the authentic kick. I added fresh ground garlic and some cayenne pepper to it also.

Foolproof Rib Roast

I was given this recipe from the family of a butcher. It's true! Absolutely the best way to cook prime rib roast. For a very small roast the cooking time does need to be shortened a bit. But for the most part the same method works for all roasts.
