Slow Cooker Chicken Marrakesh
just got finished eating this and it was very good. followed previous reader suggestions and doubled all the spices. I also used chicken thighs which broke apart so nicely after spending about 4 hours on high (then warm for another hour). I forgot to add chicken broth, however, and the chicken was a tad on the dry side. I served it over plain couscous - even my husband liked it and he doesn't care for sweet potatoes - he even asked that I add celery the "next time I make it".

Mediterranean Vegetable Stew
Made this last night for my mother and fiance. It was my first time cooking eggplant and their first time eating it. I did not have rosemary or parsley which made the meal kind of bland (no one's fault but my own). I did weep the eggplant for about 45 minutes prior to cooking. Overall it is a great base recipe that I will be using again in the future.

Broiled Tilapia Parmesan
Just got done eating this and made a few tweeks of my own. I didn't have celery salt or onion powder, but I did add the garlic powder, red pepper flakes, bread crumbs and paprika that another user suggested. I also used low fat mayo and margarine. The only thing that didn't work for me was coating the fish in the breading. I found that after broiling the fish for three minutes, the mixture would not stick to the fish so I didn't get an all over crispy topping as I was hoping for. It did taste great, though!
