Tossed Salad with Citrus Dressing

Reviewed: Mar. 8, 2009
I love this salad!! I can't get enough of it. I tweak it a bit based on some of the other reviews. I add about 1 Tb of honey to the dressing. I also use just fresh spinach, use mandarin oranges instead of regular, and I add toasted walnuts and feta cheese. I also use a whole avacado. Today I didn't have any radishes, so instead I added chopped kohlrabi. Great salad and dressing. Thanks for sharing!!

Baked Garlic Parmesan Chicken

Reviewed: Jan. 17, 2009
This was SO good and so quick! We didn't have bread crumbs on hand, so we used crushed up Ritz crackers. We also used an "Italian blend" of shredded cheese rather than Parmesan. Wow. This is definitely a keeper!

Bean Soup With Kale

Reviewed: Dec. 19, 2008
I loved this recipe! The soup is SO good! We are going out of town, so I froze the extra, but I really want to eat more! I used regular tomatoes and added mozzeralla/parmesan cheese on top! Tasty!

Betsy's Mandarin Orange Salad

Reviewed: Dec. 13, 2008
Very easy and tasty! I didn't have apple cider vinegar, so I just used plain white vinegar, but it still tasted great. I think next time I might try some of the other suggestions about using 1/4 c of oil instead because it was a bit oily. Instead of red leaf lettuce, I just used various salad greens that I had on hand. Also, I used a white onion instead of a red onion (that is what I had on hand). I followed the other tips to soak the onion in water first. I also left out the celery becuase I didn't have any. Very tasty salad!

Delicious Greens and Ham

Reviewed: Dec. 13, 2008
This was pretty good. I had never eaten turnip greens before and needed a recipe. It looked colorful and healthy and tasted great! We didn't have apple cider vinegar, so we just used white vinegar. I also had to use stewed tomatoes instead of diced. Next time I think I will use diced. All in all, it was quite tasty. I would make it again.

Broccoli with Garlic Butter and Cashews

Reviewed: Dec. 13, 2008
I didn't have any cashews when I made this and I had a lot less soy sauce then I realized (only about 1 TB). Still, the flavor was good and I received a lot of compliments. I think next time I will try it with the right about of soy sauce and cashews. It was a fun, new way to make broccoli.

Apple, Beet and Avocado Salad

Reviewed: Dec. 13, 2008
I LOVED LOVED LOVED this recipe! The mixture of the tastes was wonderful. The only downside was that it took a long time to make, but it was worth it in the end. My husband and I both enjoyed it. There was a lot of extra salad dressing, but I will probably just use it for other salads.

Easy Apple Coleslaw

Reviewed: Dec. 13, 2008
This was delicious! I am not normally a huge fan of cole slaw, but this was so incredibly tasty! My husband loved it too! I think next time I might try it with a little vinegar (although I personally like the sweetness as it is) or with a little less dressing. I love that it doesn't use a ton of mayo like many cole slaws.
