Sour Cream Chicken Quiche

Delicious. Worth keeping in your recipe box to make regularly. I usually make this day after roasting chicken (using leftovers). Prebake pie shell for 10 min.

Peppered Shrimp Alfredo

WOW. This was gooooood. Substituted the Alfredo Sauce from this site which is also delicious and easy to make. Really liked that it didn't take a long time to make.

Mexican Potato Nachos

Delicious. Very versatile. Use parchment paper to avoid the potatoes sticking. Buy organic potatoes, wash, and do NOT peel for additional nutrition or substitute sweet potatoes. No guacamole so simply used avocado slices. I liked a little more meat in the dish, increase to 3/4 lb. Needs much more than 1/4 cup lettuce and definitely use salsa as topping.

Eggplant Croquettes

Very tasty -- sort of easier version of Eggplant Parmesian. As is, I give it 4 stars. If you layer it adding Marinara sauce and mozzarella cheese and baked for about 25 min. it's definitely a 5. Made the mistake of not draining the water, so came out somewhat soupy, but still managed to pan fry with a tad olive oil sprayed on pan.

Garden Pork Stir-Fry

This was pretty good. I was surprised considering there weren't a lot of ingredients to the sauce. Double sauce with 1-2 addl tbl of soy and sub the rest with water. Don't double arrowroot (healthier than cornstarch). Add 1/4 - 1/2 c. water while cooking. Saute a LARGE onion separately, otherwise not cooked enough. If using veges that take longer to cook, i.e., carrots, broccoli, etc., cook veges first as pork will toughen if cooked too long.

Ethiopian Cabbage Dish

As is, this rates a 4, but with modifications a 5. I agree with previous reviewers: Reduce oil to 1/4 c., double the spices (salt to taste), add garlic clove. I made the mistake of reversing the order of the cabbage and potatoes -- will put them in at the same time. Definitely will make this again, though have to add meat (perhaps a smoked sausage) for family.

Cranberry Pistachio Biscotti

Cons: Not sure what all the fuss was about. I thought these were "just OK." Too much sugar - could easily reduce to 1/2 cup. Biscotti with whole grain, i.e., kamut, much more flavorful than white flour. I like the idea of using olive oil, perhaps a combination of olive oil/butter would be worth trying. Pro: Easy to make, sticky, but the wet hands trick works. Can taste/smell the olive oil in the raw, but once cooked they were fine. No problem cutting, just be sure not to overbake, press down firmly, evenly from top.

Baked Spaghetti Squash Lasagna Style

I was looking for something that would be fairly quick and easy to prepare. While this fits the bill for those categories, it falls short in the taste department thus the 3 star rating, just OK, not something I would care to make again. One can of tomatoes would have sufficed and a LOT more flavor.

Basil Tomato Soup

Rates a 3 as is -- good, but I wouldn't have made this again. My son and I both thought something was lacking--definitely garlic and perhaps sauteed onion as another reviewer stated. I threw everything into a Blendtec, pulsing the basil lightly at the end. For those who remarked that reducing the butter and cream was healthy -- I'm sorry but you are in error. French Beef Stew

VERY frustrating to find reviews based on changes they had made to the original recipe. As other reviewers stated this was very DISAPPOINTING--needed to cook the beef 2 hrs. for tenderness, potatoes were mushy, and the dijon overpowering.

I would have given this a 1 star but my husband thought it was OK. I'm amazed at what people rate 5 stars (of course AFTER they've doctored it up). Recipe not worth saving and repeating.

Black-Eyed Pea Salad II

Maybe it's the black-eyed pea taste itself, but we didn't care for this at all -- less so the next day. Too vinegar/sharp tasting. This is definitely not one of those recipes saved to my list of "greats" that I'd like to make regularly.
