Mom's Zucchini Bread

Easy Shake and Bake Chicken

This has become one of my family's dinner staples. Super easy, super tasty... what else can you ask for? I used organic buttermilk pancake mix (i didn't have flour in the house!) and it turned out fabulous! The other ingredient I didn't have is the sage, but I don't miss it at all. Great recipe, and whole family (picky husband and 5-yr old) LOVE it!

Sweet Potato Latkes

Veeery tasty, but be sure to extract any moisture from the potatoes. I was trying to make it quickly and skipped that step. Although the latkes were delish, they were also still moist inside after frying and kinda fell apart (tho I did do my best to keep most of them whole). So be sure to extract as much moisture as you can! :-)

Texas Pork Ribs

Yeehaaaaaw! My husband forgot to season and prep the ribs for dinner one night and when I found them in the fridge the next morning, I had a sense of dread in my belly... I HAD TO SEASON AND PREP! Being that I'm a newbie at cooking, something like ribs is intimidating to me, and so I wanted to find an easy and hopefully tasty recipe for ribs. Eureka! This one was it! Easy-peasy ingredients that I already had at the house, and all I had to do was mix the dry ingredients and slap them on the ribs? Oh yea. That easy. I'll tell you that after I rubbed the spices on, I only left it in the fridge for about 2.5 hours and I baked in the over for another 2.5 (I poured a little Blue Moon beer in the pan so they wouldn't dry --not that they would have dried, just any excuse to use beer, i guess), and then the hubby grilled them for about 5 minutes using store-bought sauce. Perfecto! The fam loved the flavor, hubs was impressed that I was able to prep said delicious ribs, and me? I'm feeling pretty good about rubs and ribs now! (p.s. I did alter the amt of sugar -used a little less- and it was still GOOD and sweet)

Pan Seared Red Snapper

I just made this tonight for dinner and it was just MEH. I was looking for a quick and easy recipe where I had all ingredients at home. This one was it! The only thing i swapped was the rice vinegar; i didn't have any so i used white wine vinegar instead. I followed the recipe to a T, but I've got to say that the flavor didn't pop -it wasn't bad- it just wasn't anything special. I also thought the snapper would be more of a pan seared result, but was more on the sauteed'ish side, which made the texture of the fish not flaky but more like gummy or chewy. Again, not a terrible thing, just not what I expected. My family ate most of it to be nice, but it definitely was not a fave and I won't be making it again.
