The crunchy rice problem is because the pot has to be covered while cooking the rice. The first time, I found this recipe to have too much of a tomato flavor. I substituted 8 oz of chicken broth for 8 oz of the crushed tomatoes, and it was perfect the second time.

Chicken Chimichangas with Sour Cream Sauce
This is really good, but there is too much chili powder for my taste. I did double the other seasonings, and the only seasoning I could really taste was chili powder. I will decrease next time, and hopefully get a chance to try the sour cream sauce!

Chicken Puffs
If you are a garlic/onion fan like I am, this is an amazing recipe. If you are not, you may want to start by halving the amount of garlic and onion. This is an awesome base recipe that has endless possibilities. After reading other reviews, I did cheat and used canned chicken to save time; I also did not have croissants, so I used biscuits. I don't usually rate recipes that I make changes to, but since I prefer real chicken to canned and croissants to biscuits, I cannot imagine how good this will be when I make it the 'correct' way next time!
