Hot Artichoke and Spinach Dip II

Great Recipe!! I increased the spinach and minced garlic a bit! Tastes fine if you only have with only Parmesan and Mozzarella cheeses. My pre-teen boys love it ALOT!

Braised Balsamic Chicken

GREAT!!! It's much better with Bone-In Breast!!! Bake Breast 45 mins, drain, cut 1/2. Drain tomatoes, up Vinegar to 2/3, mix all ingredients then simmer on stove to poured over cooked breast, simmer in oven 30+ mins at lower heat in tight fitting pan and cover w/ foil. My 9 yrs olds + hubby loved it more with bone breast over boneless. Breasts taste better the longer they sit the sauce. A KEEPER!! Great with Rice...use extra sauce/juice to top rice...might want to increase sauce.

Marinated Ranch Broiled Chicken

WONDERFUL!!! I would suggest 2-3 tbsp on red wine, pepper, more chicken can be added. I have only used on chicken Wings...usually about 6-8 in bag to marinate (3 hrs @ min). Poure marinate over meat. Bake for 30 mins at 350 with bottoms up.. then remove & adjust oven to broil temp...turn meat upward skin up, broil for about 15 mins...until darkens. A KEEPER...VERY good recipe!!!

Chicken Creole

Great dish!! READ this... Add chicken broth and extra can of diced tomatoes for more sauce for rice..needed. Also added more garlic for flavor. Celery is not essential. For better flavor simmer all toppings in pot before baking...let sit on chicken under low heat 325 for 30-40 for flavor. Enjoy!

Grilled Rib Eye Steaks

Great marinade!! My family loved their steaks. It works in 4 hours if you can't do it overnight. Regular onions will do too! Enjoy!

Super Sausage Gravy

Easy Chicken Fajita Soup

GREAT! !! MUST TRY! Taste better if sits overnight OR hours to get flavor going. Suggest to marinate chicken in 1/4 of fajita seasoning & tbsp of water. I used 3 peppers (red, yellow, orange) had on hand; added 1/2 bag of frozen corn for veggie; used canned (drained) kidney beans that I had. Suggestion if don't have Broth, use water and buillion instead. A favorite soup!

Tacos in Pasta Shells

TRY THIS! Great for weekends. Used Turkey Meat, replaced Taco Sauce with Salsa based on prior reviews. Ate with chips, not in tacos. Kids and Hubby loved it. Cooked a few shells with taco sauce and was more impressed with Medium Salsa (more flavor). Lightly covered bottom of pan with Salsa (no butter used)...kept shells moist w/flavor and used it when kids asked for extra Salsa..did not waste. Buy large Salsa for this reason. A Weekend Keeper!!

Chicken Enchilada Casserole II

A MUST TRY! Kids loved it too (w/o beans). Skillet cooked & seasoned chicken breast in little olive oil then shredded it...much more flavorful than boiling...makes it bland. Also, I used 1/2 the soup to keep it from being too runny as suggested in other reviews. Added more cheese on top esp. Recommend more chicken than less.

Company Cauliflower

Marginal! My family did not care for this one. Three problems: Too dry, too bland (need seasonings) and the crumbs tasted like I just dumped them on top. Maybe more butter is needed or maybe I will just try sauteed Ritz crackers on top (using more butter) which I got from another recipe. I did like the cauliflower with cream and cheese mix..needed more. Must add milk or cream for moisture. Recommended 1 head..makes alot.

Pizza Casserole

GREAT recipe...made 2x in 2 weeks per request. Used italian sausage instead of beef and can use marinara sauce or spaghetti sauce instead of pizza sauce. It turned out fine. Also cooked peppers, onions and pepperoni before mixing... read others review. Great one dish meal.

Chicken Milano

AWESOME! My 2 kids and hubby loved it. One major change, you MUST double ALL the ingredients for the sauce. There was not enough sauce for the pasta and chicken. If you want you want leftovers, you need to triple it. You can get away without tripling the tomatoes but definitely all others. ENJOY!

Firecracker Grilled Alaska Salmon

TOTALLY AWESOME!!! ...as the young ones would say. Taste fine if you marinate and broil in oven about 20+ mins. It still tasted yummy. As suggested by others, if you cannot marinate for 4 hrs, then do at least 30 mins...however, you may need to warm the leftover mixture in a pot and spoon about tsp. over top of each piece before serving. Reduce red pepper for kids; otherwise, no substitutions but olive oil, if needed. A DEFINITE KEEPER!!!

Fruited Curry Chicken Salad

EXCELLENT! However after reading others suggestions, I added 1/2 c. of plain yogurt to make more moist (A MUST), doubled the curry for more flavor, and a dash of sugar. If boiling the chicken breast, add chicken buillion (if have)and pepper to the water for more flavor. Everyone loved it at my ladies gathering. I would say yogurt or sour cream is essential with the mayo, otherwise, too dry. TRY THIS even if you don't have the extras like raisins or pecans but must have the fruit.

Lemon Pepper Zucchini

Very, Very good! However, can make better by adding granuated garlic and adding grated parmesan CHEESE on each pc. in last 5 mins..then return to oven. Reduce pepper. To make even quicker, substitute butter with olive oil...pour Tbsp oil in bag and toss cut pieces before seasoning. Oil does not change the taste. However, cheese is essential to me!!! My picky hubby and tween kids liked it alot!!!
