Chocolate Covered Marshmallows

Made these for my daughter's valentine treats for her to hand out at school. Put the marshmallows on a popsicle stick dipped them in melted chocolate and sprinkled them with valentine sprinkles. They set up nice and I was able to bag them, add a ribbon and her valentine card. So simple and the kids LOVED them!

Chocolate Chip Breakfast Cookies

Great recipe Dianne! I just had to try these after reading the reviews. I was also surprised at how little butter this recipe called for. I decided to use cinnamon apple sauce. I yielded 12 large size cookies using a 1/4 c. measuring cup as suggested. These cookies bake up beautiful and thick!. My daughters (ages 9 and 3) thought these tasted great. So happy to have a healthy cookie recipe like this... cheers to you Dianne!

Stuffed Strawberries

How can you go wrong with strawberries and this filling! Brought these to a summer party and everyone loved them. I didn't have orange liquor so I used 1 tbl vanilla instead. I also sprinkled the tops with grated chocolate. YUM!

Angela's Awesome Enchiladas

These enchiladas were very enjoyable. I agree with people who have said that there are a lot of steps to this recipe. In the future I will probably use corn tortillas vs. flour and look for ways to combine a few of the cooking methods in the recipe to cut down on prep time. Overall a good recipe.

Peanut Butter and Jelly Sushi Rolls

Made these for my girls for lunch and they thought they were something special, especially since mom and dad are sushi lovers =) I found it was best to flatten the bread, cut it into four strips and then add the peanut butter and jelly then roll. Less mess and looks more presentable.

Restaurant Style Beef and Broccoli

We enjoyed this dish. Flavors work together. We thought it was a solid 4 star recipe. Loved how the broccoli tasted after cooking it in the oil flavored by the ginger root and garlic, I will definitely incorporate that into cooking broccoli in the future!

Caramel Bars

Yummy! I left out the chopped walnuts because my nephew who was visiting is allergic to nuts. I used an 8x8 pan and increased the cooking time. If using a 9x13 you would definitely want to double the recipe. The kids liked helping unwrap all those carmel candies. The carmel and heavy cream takes a while to melt over low heat so get that started first and then do the rest. The recipe says to cut into squares while warm, definitely let them cool for a while or they will fall apart. I stuck mine in the freezer for a short time and that definitely helped. Great recipe!

Simple Sweet and Spicy Chicken Wraps

Hubby LOVED this one, raved about it actually! The sweet and spicy hit the spot. I used thin cut chicken breasts which worked perfectly for quickly cutting them into thin strips. The sauce is amazing. Quick, delicious, and easy. Thanks for a great recipe! As Nuclear Rich put it "it will rock your taste buds!"

Too Much Chocolate Cake

Took this to a dinner party and everyone enjoyed it. Baked it in a bundt pan and it baked up really nice. Topped it with a little powdered sugar, chocolate sauce and fresh strawberries. Then made homemade whipped cream to serve on top. I would rate it 4 1/2 stars if I could.

Grandmother's Buttermilk Cornbread

Fantastic! I love that this cornbread is moist instead of dry and crumbly. Doubled the recipe and used a 9x13 cake pan. Baked up beautiful, thick and stayed in tact when sliced into pieces. Everyone loved it!

Beth's Spicy Oatmeal Raisin Cookies

YUM! Delicious! They smell so good and taste wonderful! I substituted dried cranberries for the raisins and threw in some white chocolate chips (couldn't resist, they go so well with the dried cranberries!). My girls loved them and my nephew did too! Hubby will try them when he gets home.

Gourmet Mushroom Risotto

Tasted wonderful, although even after following the instructions very carefully I found that the texture was more mushy than al dente. Definitely time consuming, not a fast fix side dish for a busy family. I will probably try making this again and play with the amount of liquid to see if I can get the texture down right.

Banana Pancakes I

These were okay, not bad but not great. I used 1/2 c. white flour and 1/2 c. white whole wheat flour and added 1/2 tsp. vanilla and some chocolate chips. I agree that there is maybe a little too much baking powder in these. Will probably move onto other pancake recipes.

Cranberry Orange Cookies

These were enjoyable. Made them over the holidays. I was going to try and use fresh cranberries and then chickened out after tasting how tart they were, I was a little unsure how they would be because I've never used fresh always dried. I had some dried cherries on hand so I used those. I liked them as did several guests, I think the orange flavor might not be for everyone.
