Sweet Potato Pineapple Casserole
Delish indeed! I get compliments every time I serve this and it is a staple at our holiday gatherings. The only reason I'm not rating 5 stars is that it needs a topping in my opinion. I use whatever casserole dish(s) fit the finished product since sweet potatoes vary so greatly in size. The ingredient portions are perfect for smaller - medium sweet potatoes but for larger ones, I'd suggest increasing the pineapple, brown sugar and butter a bit. For holidays, we make one dish with the pecan, brown sugar, flour, butter topping suggested by other reviewers and top another with marshmallows for the younger crowd. I also heat the pineapple, brown sugar and butter in a skillet before mixing with the sweet potatoes but my husband makes it as indicated in the recipe. Either way, we love it!

Best Peanut Butter Cookies Ever
Loved this recipe! I used crunchy natural peanut butter (the kind you have to stir). We did have to add a bit of water to the dough as it started to turn crumbly using the KitchenAid mixer. (I think we over mixed.) The cookies turned out crunchy on the outside and moist on the inside - my perfect kind of cookie. You can try cutting the sugar by 1/4 a cup if you don't want as sweet a cookie but if you make just as listed they are good too! I used parchment paper for easy clean up and cooked exactly 10 minutes. The cookies were not "gritty" and cooked perfectly. As others have mentioned, space them as indicated for a more perfect looking cookie - and these will be on the flatter side. Now that I know this is an excellent recipe on its own, I'll try some of the other tips (1/2 white, 1/2 brown sugar, using part Nutella, etc.) My mouth is watering just thinking about it!

Soft and Chewy Peanut Butter Cookies
These cookies are wonderful! I added a bit more peanut butter (Adams 100% natural crunchy). Otherwise, I followed the recipe and in 18 minutes, had cookies that were crunchy on the outside, moist and chewy on the inside.
