Chicken Tikka Masala

Absolutely loved the marinade and will use it again and again. Only added 1 tsp of salt instead of 4. Reduced the cayenne considerably and threw in some garam masala, too. The sauce was flavorful, but nixed the 3 tsp of salt here. Maybe 1/2 tsp used? 7 tsp of salt for the whole dish is too much in my opinion! I like my blood pressure where it is! Overall, it was wonderful!

Authentic Saag Paneer

This turned out great! Easily as good a flavor as what I've had in many restaurants. I did make some intentional and unintentional modifications that I thought would be helpful. FENUGREEK: I did not have fresh fenugreek or dried fenugreek so I added a couple of hefty pinches in, stirring and tasting each time. PANEER: I read that Queso Fresco was a better option than store bought paneer if you didn't have time to make paneer from scratch. It was the perfect consistency and flavor! I DO have to admit my cubes became crumbles because my heat was too high. Ooop! Lesson learned for next time. CREAM: As at least one other user suggested, I used coconut milk instead of cream. I used the whole can and let the moisture cook down. COOKING TIME: This did not take longer like others have suggested. I believe that longer cooking times have been due to spinach not being completely drained of water. SALT AND CAYENNE: I added a considerably smaller amount of both of these. I didn't add salt until the end and added it to taste. I only threw in a couple of pinches of cayenne because I knew my kids wouldn't touch it otherwise. :) Hope this helps! Happy cooking!

Grilled 'Fusion' Pork Chops

Easy! Instead of purchasing garlic and ginger pastes, I made pastes from fresh ginger and garlic. The flavor was wonderful although I think 10 minutes on each side would have overcooked my chops.

Christmas Breakfast Sausage Casserole

Easy peasy. I used whole wheat bread I had on hand and added three extra eggs and three extra pieces of toast to stretch it farther. Plenty cheesy and sausagey that way, as well.

Beef Samosas

Vegetarian variation This recipe has great flavor to build on! I eliminated the beef and added additional potatoes (2-4 more based on size)and added another 1/2 c of frozen peas so they'd be vegetarian. Wonton wrappers instead of Phyllo pastry were a great and more authentic substitute.

'Calabacitas Guisada' (Stewed Mexican Zucchini)

This was so easy and extremely good! Because of the cheese I found I didn't find a need to add any salt. Sometimes supplement two of the zucchini with two yellow squash for variety.
