Cowboy Oatmeal Cookies

These were delicious. I didn't have vegetable oil so I used coconut oil and it added a nice little flavor to it. I also used butter in place of margarine. I could see these cookies as good with any sort of add in such as white choc chips, choc chips, nuts, toffee bits, etc.

Chocolate Zucchini Bread II

This recipe was good. It wasn't what I was expecting as far as I wanted something that was more moist and cake like. The batter on mine was very thick and I made muffins which only took 25 minutes to bake. I am thinking I will try something to make it a bit more moist like like yogurt or less flour. But with that said, they still had a very good flavor just a thicker consistency. The kids liked them and couldn't even tell there was zucchini in it.

Poppyseed Dressing

Loved it! Also cut the oil in half and it tasted great. We have made this several times now and made several variations of it depending on what we have on hand and all turned out well. We have also made the original recipe and it was also really good. Some variations were using onion powder in place of grated onion, olive oil in place of vegetable oil, half the oil, stevia in place of sugar, regular mustard in place of dry mustard, and omitted poppyseeds, added pepper. It's great no matter what. It seems like every time we go to make it we don't have everything and hand and have to substitute something.

Mama's Chewy Oatmeal Cookies

This recipe was pretty good. I was looking for a tad more chewy but this was pretty close! They had a good combo of soft, chewy, a little crispy. Just about perfect. :)

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Every time I use this recipe my eggs turn out perfect. And I have used this on very fresh eggs from our farm that are only 1 day old. They never stick to the shell when I use this recipe so I have to believe it works! In fact, we give our customers this recipe with their eggs so they can boil them w/out troubles. Yes, you could use store bought old eggs and not need the vinegar, but why do that when you can use perfectly fresh farm eggs and still have awesome boiled eggs. I also think putting them in the ice bath right after seems to help. Thanks Ken for putting this recipe out. It works great for us.

Kentucky Biscuits

Rhubarb Crisp

This was ok. I prefer the crumb topping with the oats on top instead of in with the fruit...I probably wouldn't make it again and would go with my old standby recipe but it was fun change of pace for one time.

Followed this recipe to the T and it was a hit with everyone. I think I would try graham cracker crust next time, my personal favorite. But it was very good and super beautiful! I used fresh raspberries and blueberries on the top.

Perfect Turkey

This was one of the best turkeys we've made. I didn't have as big of turkey but it still worked. I didn't measure any of the ingredients just estimated and it was all fine....I skipped the bay leaf and put in rosemary instead. Moist! The only hard part was figuring out how to turn that bad boy!

Budget Berry Jam

Made this according to the recipe and it was good. A pleasant suprise althought not as good as regular jam w/fruit it was still good. Don't be discouraged the end product is much better than it smells or looks during the process! I used a combination of strawberry and raspberry together and then another batch with cranberry, strawberry and blackberry.

Mushroom Sauce Baked Pork Chops

This was very good and farely easy to throw together. What I loved is that I already had the ingredients on hand. Although, I didn't have cream of mushroom for some reason so I used cream of potato and that was very tasty.

Easy Chicken Enchiladas

This was a great basic recipe. Very easy. I also used what I had on hand. I did not have beans so I used some things from Tastefully Simple - the corn black bean salsa inside the enchiladas. Then I used enchilada sauce on top and underneath. I cooked the chicken in their S.W. Season Salt to add flavor and reduced the cream cheese to 4 oz. The entire family loved it.
