Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I did use a recipe for a substitute for the boursin with cream cheese (would have had the same seasoning as the herb flavored one). I also used a whole pound of shells. I can't imagine it being as good with the pepper flavored boursin, however. We all loved this dish! My husband asked me to make this often and my 7-year-old son was pretty happy about getting seconds! So, second time making this, I used the boursin cheese (herb flavored one) and it wasn't nearly as good as using the substitute recipe I had found. When I used the substitute, there ended up being a lot more herbs in the dish than with the boursin and that made a huge difference. I will still say this is a 5-star though.

Broccoli, Rice, Cheese, and Chicken Casserole

I loved this. I was leery because I'd never had canned chicken, but I decided to stick with it for the convenience. This was an amazing dish. It was perfectly moist, delicious, and definitely a keeper. The only change I made was that half of the cheese was a shredded cheddar blend because I ran out of the other. The one change I will make next time is cooking the onion a bit ahead of time or just using dehydrated or powder. I felt that the onions were still a little too raw for my taste (no one else seemed to mind though). OK, second time making this: I skipped the onions, and I used the full amount of processed cheese. I will go back to half processed cheese and half regular cheese for future makings.

Spaghetti Carbonara II

Oh, this is delicious! I had this dish at a restaurant recently and this recipe turned out even more delicious. I pay have added more bacon, I put in the whole pack, but I wasn't sure how much spaghetti I'd cooked anyway. Otherwise, I made no changes. This is definitely a keeper!

Russian Mushroom and Potato Soup

I have a favorite potato soup recipe using ham and I really didn't expect to like this recipe more, but I liked the idea of having mushrooms in the soup so I decided to try it. That recipe has now been replaced; this was amazing. One change I will make next time is to put the flour in with the vegetables before the broth (to make a roux) to make sure the flour doesn't lump. As the recipe is, I could see lumps, but I couldn't tell they were there while eating. My fiance asked that I make this again next week... and often. My 7-year-old boy loved this soup as well and didn't say a word (he's normally chatty) until his bowl was empty and he was asking for seconds.

World's Best Potato Soup

This will now be my go-to potato soup recipe! A few minor changes: I seasoned it the way I like to season potato soup, and I also took my masher and gave it a few mashes to make sure it was thick enough.

Slow Cooker Chile Verde (Green Chile)

Delicious! I had a 6lb piece of meat so I cooked all the meat all at once with some of the salsa, pulled out half the meat after it was cooked (made green enchiladas with it) and then added everything else and cooked a little longer.

Slow Cooker Lasagna

I felt that the cheese mixture really did not handle the slow cooking well and lost so much of what makes lasagna delicious. I will go back to making lasagna in the oven.

Creamed Cabbage

If you like bacon, you will probably like this dish regardless of how you feel about cabbage. I love red cabbage, but I am not very fond of cooked green cabbage. I really like this dish and could probably eat it all day. The only change I made was to substitute plain greek yogurt for the sour cream because I didn't have any sour cream on hand. This is one I will definitely make again.

Chocolate Chip Cookies I

I chose this recipe because I didn't have time to run to the store for butter. If you are looking for a shortening recipe, go ahead and try these, otherwise, move on. I did triple the recipe and put in 1/2c margerine and 1c shortening as recommended. I also increased the amount of vanilla. I have made about a dozen different chocolate chip cookie recipes and I would rate this down at the bottom.

Baked Kale Chips

Very good considering I don't like kale. My five-year-old who isn't as picky as I am dove right in and stuffed his face. I didn't have a baking sheet (just moved, still packed) so I had to squeeze them in a baking dish, eat the crispy ones off the top and then put the rest back in the oven a few times. I could tell by touch which ones were done so it was easy to do some flipping part way through. I will make these again since they are so healthy.

Herbed Eggplant Slices

This is absolutely delicious! My only changes: I added in some fresh rosemary because I was trying to find uses for it, and I think I doubled the oregano because I love oregano. This isn't a fat covered eggplant recipe, so it shouldn't be compared to one. This is an incredibly healthy, delicious recipe and I really don't see how adding fat could even make it taste better. My five-year old (who isn't picky, but a kid nonetheless) gobbled it up and asked for more. I will be sharing this recipe with family and friends.

Pecan Pie V

This pie tasted fantastic! The taste is far superior to the traditional pecan pie. The only changes I made were to roast the pecans. I did also add another half cup of pecans on the top of the pie to ensure that it looked nice. I know there have been some complaints about the foamy top, but this is all you have to do to counter that. Oh, I did also have to make 1 1/2 recipes to fill my pie crust and then increase cooking time to compensate, but this is common for me. I will definitely make this recipe again and again!

Yummy Eggnog Pie

I made this last year for Thanksgiving and I am preparing to make it again this year. If you have to eat it frozen or with a spoon, you didn't let it thicken enough! It needs to be more flubber consistency before you stop cooking it. (Once you add the whipped cream, it will be prefect).
