Vegan Cheesecake

My brother who is a dairy-eating, meat-eating regular guy calls this "delicious pie" He almost ate the whole thing. I, who am an always-vegetarian/ 80% vegan ( still can't always find vegan options with my lifestyle) ADORE this. You can make it with stevia instead of sugar and cut down on some of the calories. Tip: Be sure to drain the tofu properly (press it on some papertowels ( put a papertowels, a cookbook, and a heavy can on top, and papertowels on the bottom) to avoid your pie/ cake getting runny.

Tofu Peanut Stir-Fry

Loved it! Got my boyfriend to eat tofu. Made extra sauce and served it over rice noodles. YUM I used powdered ginger instead of fresh, and fresh veggies instead of frozen.

Creamy Vanilla Pudding

I made this into rice pudding. (They gave us too much rice with our chinese food last night and I couldn't bare to just waste it all) I just added 1 cup of cooked rice to the milk at the beggining of the recipe and then followed the instructions exactly. It is VERY delicious-- and a great way to get rid of left-over rice!

Sugar Cookie Glaze

I substituted 1tbs. of water for lemon juice which helped to pump up the flavor, and went great with the sugar cookies. This was a little harder to work with than I expected, but it also gave a nice shiny finish to my cookies, I would not reccommend this for first time cookie decorators, but it is GREAT for more experienced bakers.

Coconut (Haupia) and Chocolate Pie

I made this with a coconut crust (by pressing sweetened coconut and butter into the bottom pie plate and baking it for 15 mins and cooling it prior to making the filling) I also added some coconut and vanilla extract to the heavy cream to make it more coconutty! It was a big BIG hit at my christmas party 2 people told me it was the best pie they had ever eaten. MY only complaint is that it needs to cool a long time before it is ready to sliced, I reccomend making it the day before you plan to serve it, because it seemed to need a full 24 hours to cool and solidify completely. (the leftover( not that there was much)was BETTER)

Sugar Cookie Frosting

Took a little practice to get it on the cookies right, but it was just what I was looking for as far as being both Yummy tasting and good-looking on the cookies :-)
