Best oatmeal cookies ever! I think the secret is step 1 (makes the raisins nice and plump!) so don't skip it.

Brooke's Best Bombshell Brownies

These had good flavor - coco-y goodness rather than an artificial mess. The problem i had was that they dried out quick. The best when they are right out of the oven so they are hard to make for work events.

Marinated Pork Tenderloin

Reviewed: Jan. 1, 2011
My husband and I really enjoyed this recipe but it didn't turn out exactly how I wanted it to and it may be because we oven baked it rather than grilled it. I marinaded it for about 12 hours but I really don't think the ingredients soaked in the meat. I doubled the ingredients to make the sauce (everything except the cinnamon) and made a roux with cornstarch. It was juicy and the flavoring was good, just the color of the final product wasn't pretty. I wish it was more caramelized or browned. I did oven bake it on 400 for 40 minutes, used 1 pork tenderloin equiv. to 1.7 pounds and used real onion instead of minced and real garlic instead of powder. Also used pumpkin spice (mostly cinnamon anyway) rather than just cinnamon. Since the sauce is so flavorful I made with steamed carrots, salt and peppered and the Honey Roasted Red Potatoes from the website to balance out the flavor. Will try browning the outside next time but did like it overall. NOTE: The sherry is a must! You can find at any grocery store by the vinegar.

Honey Roasted Red Potatoes

Reviewed: Jan. 1, 2011
Made this as part of our new years dinner. Yummy way to Dr. up red potatoes. Used a whole bag of small petite red potatoes. Used 1/8 of onion and cut into small chunks. Combined and spread on a foil covered baking sheet-ungreased. Next, combined butter as suggested and eyed the honey (used Palmetto honey) but pretty sure it was about tripled as to what the recipe called for. Mixed in 1 tsp of cayenne as we love spicy with sweet. Drizzled on potatoes. Don't worry about covering every potato, as you will be turning them during the cooking process. Sprinkle with kosher salt and ground pepper. Cook as directed, rotating once or twice during cooking process. Broil additional 5-10 minutes to brown.

Pumpkin Crumb Cake

Reviewed: Nov. 27, 2010
EVERYONE LOVED THIS!! Good dessert to bring when there is already pumpkin pie at the table. There were no leftovers of this. One modification; I used pumpkin spice instead of cinnamon. I used actual baking pumpkins for the filling and I also used a round spring form pan. Turned out beautiful and no leftovers. Thanks!

Southern Candied Sweet Potatoes

I did something wrong. The flavoring was very good, but they just ended up being very mushy. Next time I am going to caramelize the sugar, then add the potatoes.

Crustless Cranberry Pie

Reviewed: Nov. 27, 2010
If I could give this 10 stars I would! I have been trying to find "my pie". My mom-in-law brings the pumpkin, the neighbors have the pecan and now I have the Cranberry Pie. YUM!! I modified by using half cup whole wheat flour, lowered the almond extract and substituted for vanilla. I also used almonds instead of walnuts. This is a keeper.

Granny Kat's Pumpkin Roll

Reviewed: Nov. 21, 2010
Good flavor, but I must of done something wrong. Mine was very moist. I premade it and froze it. When I took it out the day I was going to serve it, the roll was wet. I vote it on the flavor of 5 stars because I think it would have turned out better if I didn't freeze.

I used this with two roaster chickens after new years celebration with the left over champagne. This was a meal we were able to used left overs for a week! Good recipe but may have been too greasy for chicken. I do want to make this again but with turkey next time.

Raspberry Crumb Cake

Reviewed: Oct. 11, 2009
This crumb cake was awesome! Its hard to find a good raspberry recipe. Ate it as a dessert, then as a breakfast, then as a snack. I used fresh raspberries (and I threw in a bit more than 2 cups). It is very light, like a crumb cake should be. Exceeded my expectations and will definately make again! I too used nutmeg rather than mace. So yummy. Excited to try it with different berries. Think I will do blueberries next! The sliced almonds were perfect. Thanks Pat!
