Guinness® Corned Beef

This was wonderful cooked in a the crock pot with out veggies. I used about 1/2 cup of the brown sugar and 2 cans of Guinness. I did add the spice packet from the meat and 2 more bay leaves. Cooked 8 hours on high. I made 2 in 2 different pots (for leftovers). I stored the second piece overnight in the fridge, in the juices from the crock pot and it was even better the next day. Made Diane's Colcannon to go with it and my guests could not stop raving about both the Corned Beef and the Irish Mashed Potatoes! Thanks everyone for all of the cooking tips!

Pasta in Vodka Sauce

This was wonderful. So easy. Took the advice of others and used the heavy cream ( 1/2 the suggested amount) and omitted the celery. At the last minute we had 3 extra for dinner so I doubled the recipe and everyone raved about it!

Diane's Colcannon

Fabulous! This was great, everybody loved it. Followed the directions as written. Used a medium sauce pan to boil and mash the potatoes and then a dutch oven to cook the bacon and saute the veggies, this reduced the number of pots and pans to clean up. The only issues was that this dish takes longer than 20 minutes to make. I would say it takes a solid 30 minutes to make this dish. What was leftover, and that was not much, was used as a layer of Rueben Sandwiches the next day. Thanks for sharing this!

Easy Tuna Casserole

Soo Good, Soo Easy! My son who is a very picky eater - loved it. Of course, I did not tell him there was tuna in it! I made it will a 1 pnd bag of wide egg noodles, 1 can cream of chicken soup, 1 can cream of mushroom soup and 1 can of milk. I doubled the cheese and mixed half in the with the soup and the noodles and the rest on top. This is an excellent, easy, cheap dinner on a work night. The only thing I think I will do different next time is to cover the the dish during the first round of cooking to keep it moist. Many thanks!

Easy Slow Cooker French Dip

Fabulous!!!! My family loved this. Even my picky eater who "hates" beef. They begged me to make it again - SOON. I mades a few changes based on reviews. Salted and peppered the rump roast. I added 2 tbls of garlic powder & 2 tbls worcetshire. I sprinked garlic salt on the buttered bread and added provolone cheese. Served the leftovers over egg noodles with brown gravey. Another hit! Getting two meals out of one roast is a home run for me! Thanks for the recipe and all the tips that made it great.

Slow-Cooker Barbecue Ribs

I have made this recipe so many times and given it out so many times, I finally have guilted myself in to leaving a review. EVERYONE LOVES IT!!! I am asked to make them for almost every party. The base sauce for this is fabulous. I adjust to make a more tangy than sweet sauce by cutting down on the sugar and upping the vinegar and worcestshire sauce. I also char the ribs on the grill prior to putting them in the slow cooker. For a variation, I use this sauce for pulled pork, use the large cryo vac pork loin, cut up to fit pot. Pour the sauce over the top and cook on low for 8 to 12 hours. So easy and goes over really big for a large crowd. Thanks so much for the great recipe!!
