I started out as a professional entertainer at the age of 9. Magic, juggling, fire breathing, balloons, etc... I began cooking professionally at age 15. My first job was at an Italian restaurant. I never went to culinary school, but did work under a 28 year chef from Chicago as an apprentice for 6 years. I also did some kitchen management through Wolfgang Puck. I've worked 7 different resorts, coffee shops, bar and grill's, casino's, vegetarian, fine dining, and steakhouses. I have experience in mexican, french, polynesian, american, asian as well.
My favorite things to cook
I love grillin, barbecue, seafood, and polynesian style. A lot of my food has a southern Tex mex style to it with some Polynesian influence with a little french influence on presentation. I cook alot with bright colors- fruits, veggies, and liquers. My favorite Chef is Bobby Flay.
My favorite family cooking traditions
My Grandparents were up at 1-2 a.m. everyday 7 days a week, cooking. By 3 a.m., they would have breakfast almost done, sourdough bread cooking, spaghetti sauce for dinner, a couple of pies in works, grandpa making beef jerky, grandma canning tomato sauce, and anything else they could muster-if there was room.
My cooking triumphs
I've had many triumphs in my time. Cooking at Resorts has been my forte' for years. I have learned alot at ski resorts, lake resorts, and year around resorts. My biggest was in 2000, when a friend called on me to cater his wedding. I designed the menu, set up the buffet line, catered the wedding by my self for 200 plus. It was great! I also was part of a plated dinner for 1000 people at a casino in Reno Nevada. That was awesome.
My cooking tragedies
I've had many tragedies. I tried to make a watermelon cake one time that did'nt work at all. I was trying to impress my cooking instructor and it blew up in my face big time. My first experience waiting tables, I dumped eight 64 oz. glasses of water on a lady's head. I had them all on a tray, came up to the table, pulled the wrong glass from the tray, and it all flipped over- drenching this poor women with ice water.
