Kentucky Butter Cake

Southwestern Chicken and White Bean Soup

Great on a cold winter night! I made the following adjustments: I boiled 3 chicken breasts, green onions and two cans of chicken broth. It wasn't even to fill up my crowd but it was filling and good. I might try adding some crushed chips to the top next time and maybe black beans in addition to the white beans. Still a great soup. Oh cooked on the stove in no time.

Spinach and Leek White Bean Soup

Yum! I used 32 oz of chicken broth, 1 bay leaf, seasonings, garlic powder...thats what I had on hand... and 1 whole leek. Also, I used frozen Spinach too. For the noodles I used Ditalini. You might want to save the bean broth instead of draining it, I found that it needed a little more broth than I used. Thanks for the recipe!

Honey Bun Cake I

I make this cake also...I use plain or vanilla yogert instead of the sour cream and it comes out moist with less calories. Another change is I cook it in a 9 x 13 pan for 30 mins at 350. I add 1 cup of brown sugar and a teaspoon of cinnamon, mix together to form crumb mixture. Bigger the crumbs the better I say! yum! poor half batter in pan, poor some crumbs on it and poor the other half in and top with remaining crumb mixture. take a knife and swirl it around. Bake and Drizzle. Yum! everyone in the house will love this one.

Canned Apple Pie Filling

This was great! I used apple pie spice instead of the cinnamon and nutmeg. Had left over syrup that my daughter poors on ice cream, its great!

Manicotti Italian Casserole

My pickiest eater came back for seconds! I was very happy. The changes I made were: I used spiril noodles & penne. 1 jar of spaghetti sauce instead of the 2 it called for. I added mushrooms, onion and bellpepper. I will make this again it was a hit with the family!

Spanish Rice

I have been looking for a great Spanish rice recipe and this one is just about like my favorite Mexican resturants! Instead of all that chopping I used a seasoning blend that contains onion, celery, peppers and seasonings. I sauted these with chopped garlic in some butter instead of using water. I also added mixed veggies..i.e corn, peas, carrots, green beans..because some resturants use those.Yum Added seasoning salt and chili power to taste. Even my picky 10 year old..who doesn't like Mexican food..ate it and asked for more...served this with tacos...it was great!
