Golden Potato Soup

Love this! I only wish it made more. I used Velveeta cheese because it's what I had on hand, and, at the recommendation of a friend, I topped mine with chopped green onions. I think I will double this recipe next time!

Greek Garbanzo Bean Salad

LOVE THIS! I used Mediterranean/Greek salad dressing because I happened to have it on hand and thought it would work well. This makes a lot, and I was worried that the leftovers would get soggy, but I think it was even better the next day after all the flavors had time to soak through.

Pizza Casserole

Mmmm...who doesn't love pizza casserole?! I follow this recipe pretty closely except I always add more cheese. You can never have too much cheese! :) Sometimes I add mushrooms or black olives or whatever else I have on hand that sounds good at the time. I also like to use ground sausage instead of ground beef.

Holiday Chicken Salad

Absolutely love this chicken salad! I have never personally made it, but a friend of mine makes it and I beg her for it. I could (and have) sit and eat a whole bowl of it...not even using it on a sandwich.

Alyson's Broccoli Salad

This salad has become a staple in my family. We love it! I don't use a whole cup of sunflower seeds (more like 1/2 cup) and I usually tweak the white wine vinegar and sugar amounts until it tastes just right...not too sweet and not too tart.

Chicken Breasts with Balsamic Vinegar and Garlic

I thought this was fabulous. Word of warning, though: it is definitely very "vinegary". If you don't like vinegar (the smell or the taste) you might want to stay away from this one. That being said, I love vinegar and loved this chicken. I served mine with broccoli and a baked potato, but next time I would like to serve with mashed potatoes.

Slow Cooked Corned Beef for Sandwiches

This turned out super tender and was really good. I cooked it in the crock pot for 8 hours. I was initially going to try to slice it, but it was just way too tender so I ended up shredding it. I didn't have any beer on hand so I just used beef broth. Next time I'll try it with beer to see if it makes a difference.

Szechwan Shrimp

This was really really good and super easy. Plus, I love the fact that it's so low in calories. (good for us dieters) I doubled the sauce so we would have extra for the rice and broccoli I served. At the suggestion of others, I doubled all of the ingredients except the ketchup. I only used 3 Tbsp instead of 4. I'll make it the exact same way next time, only I won't double the red pepper. It wasn't so spicy that we didn't enjoy it, but we'd prefer just a little less kick.

Green Beans Amandine

This was very good and makes a classy side dish. I served it with Chicken Breasts with Garlic and Balsamic Vinegar from this site and also a roasted new potatoes recipe from this site. The only thing I will change next time is that I'll cut back on the butter.

Pumpkin Spice Bread

I made this last year and am looking forward to making it again this year. Sooo moisy and just the right blend of spices. I halved the oil and used 1/2 cup applesauce. Instead of making 2 big loaves, I made mini loaves and added raisins to some and pecans to others.

Quick Black Beans and Rice

I'm sitting on my couch eating this right now and it is soooo good. I was hungry for something with black beans, rice and onion and this is the recipe I found. I used white rice because I didn't have any brown rice, and although I had stewed tomatoes, I chose to use diced tomatoes. I also used about a tsp of minced garlic along with the called for garlic powder. (I like garlic!) Finally, I added about 1/3 tsp cumin. This is so healthy and really hits the spot. I think I could eat the whole pan!

Artichoke & Spinach Dip Restaurant Style

This is so so good. I wanted to eat it by the spoonful. I made it for a potluck party last night and out of all the food there, everyone kept commenting this dip was the best item! I just used minced garlic and mixed it in with all the other ingredients. I also used the whole bar of cream cheese as others suggested. These are the only two changes I made. This one's a keeper!

Baked Spaghetti Squash Lasagna Style

Our Girls' Night food theme this month was squash. I had only made spaghetti squash one other time before this and it was awful, so I was very pleased with the way this turned out. I'd still take regular baked spaghetti over baked spaghetti squash any day, but for what it is, this was pretty good. I did add a 1/2 lb ground beef to the tomato mixture and am very glad I did. I did use the olives, just because I had them in my pantry, but I think they could be left out.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Mmmm...very very good! I'm a sucker for cake though. It's my favorite food! You just have to be very very careful not to overbake these or the cookie dough center will not turn out right. I baked mine for about 18 minutes and will probably bake them even less next time.

Sarah's Salsa

This was my first time making salsa. I took it to a tailgate party and everyone really liked it. I did make a few changes, though, which I think made a positive difference. I replaced 1 can diced tomatoes with 1 can whole, peeled tomatoes, used lime juice instead of lemon, doubled the jalepenos, added more hot sauce, and threw in a bit of cumin (based on other reviews). I also did not blend it until smooth, because I like my salsa chunky. With these small changes, the recipe is very good and will be what I use from now on.

Rump Roast Au Jus

This was pretty good. I halved the recipe b/c I only used a 2 pound roast and then I only cooked it on low for 5 1/2 hours. I tasted the juice halway through cooking and it was a little spicy for my tastes so I added some beef broth and that helped a lot. I will make this again.

Grandma's Corn Chowder

I made a few changes to this recipe. I added garlic powder, dried parsley, a little bit of butter and some frozen whole kernal corn. I also threw in one cube of chicken bouillon with the water. To cut down on fat and calories, I used milk instead of half and half and I think it worked fine. It wasn't as thick and "chowdery" as I'm sure it would've been with the half and half, but I'd rather have fewer calories and less fat. I'll make this again, but I'll probably use more bacon. I might also add some cheese.

Slow Cooker Pulled Pork

This was SUPER easy. I used 3 1/2 pounds of boneless pork rib roast and it worked just fine. I also added a few seasonings (salt, pepper, garlic powder) before placing the meat in the crock pot. I only gave it 4 stars, though, instead of 5 because there were a few bites where I could faintly taste a hint of sweet root beer. (I used diet root beer.) I think I will make this again, but I might try diet Coke next time.

Quick and Easy Alfredo Sauce

This is really easy to make and has a good flavor. I've made it about 5 times now, though, and each time I make it, the consistency is different. Many times it is too runny but sometimes I get it just right.
