Make Ahead Pie Crusts

Wow, is this a lot of pie crusts... but very tasty and flaky, and they do freeze super well! The only thing I could complain about is finding a bowl/tub big enough to mix them in all at once, but it's really such a small thing to whine about when they're so convenient afterwards! ^_^ Five gold stars, two thumbs up, and thank you so much for the time saver!

Chocolate Ganache

This was my first time making ganache, and I followed the recipe as it's written.. it turned out very rich, VERY chocolate-y, covered well and left a beautiful glossy finish with minimal effort..? Ganache, I'm in love!

Honey Glazed Ham

So I've now made this twice... I used ground cloves in the mix both times, and pineapple juice in the honey mixture once. Both times it was a hit.. delicious!

Pork, Broccoli and Rice Casserole

I use this recipe as a base and just throw in whatever I have on hand-- peas, corn, broccoli, ham, bacon, cheese... you can really use your imagination, and it's super forgiving on the cook times.. The only change I make consistently is that I mix two beaten eggs in with the liquidy ingredients before baking. Thanks Julie!

Slow Cooker Mussaman Curry

I cheated a little-- I added a little bit of cayenne for kick and cashew paste to make it a little thicker, then served it over rice.. super easy and yummy!

Big Soft Ginger Cookies

I was looking for a nice, thick, chewy, crackle-topped molasses cookie (like the one pictured).. unfortunately, I followed the directions to the letter and what I got out of this recipe was a large, puddle-like cookie that had a crunchy ring around the edge and a squashy, greasy center. I got the same result out of my second batch, thinking that maybe I'd done something wrong. Won't be making these again.

Cajun Crawfish and Shrimp Etouffe

The we have a cajun restaurant in Portland called the Montage.. they have an amazing crawfish etouffe that I've been trying to replicate. This wasn't quite it, but still very good. Thanks Rhonda!

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe makes cookies to die for IF you toss the dough in the fridge before baking.. I made this mistake the first time and ended up with big, fat chocolate chip puddles. Extra points if you use a mix of milk and semi-sweet chips!

Fabulously Sweet Pear Cake

Someone else said this should have been made in loaf pans-- I kind of have to agree. It sort of worked as a 'cake', but didn't have the right consistency.. too heavy and wet. Otherwise though it was delicious, and I don't usually like pears that much!

Cream Cheese Frosting II

This is my go-to frosting recipe.. I do usually end up adding a little extra sugar, and sticking it in the 'fridge for a while, but it's delicious and easy... and always a big hit at parties. ^_^

Kalua Pig in a Slow Cooker

I couldn't find the particular salt that the recipe called for, so I just faked it and used Lawry's salt. Still turned out really yummy though, so I'm not complaining. Nice and moist, and tasted great on home made crusty bread! ^_^

Garlic Broccoli

Two stars because I could at least power through my serving. I wasn't impressed at all. Everything was overpowered by the taste of vinegar, even after I added extra-everything-else... I feel like I just wasted good broccoli. Interesting concept, but I won't be making it again.

Rich and Creamy Tomato Basil Soup

Garbanzo Bean Chocolate Cake (Gluten Free!)

This was my first attempt at a gluten free recipe... and let's say I was skeptical about the garbanzo beans. So, the bright side: it didn't taste like garbanzos! The not-so-bright side: I'm not sure how it was supposed to turn out, but it was thick, almost like a crumbly brownie, and kind of dry. Not very cake-like at all. I added a creamy filling and ganache to counteract the dryness, and it went over well though.. so my bottom line is, if you're gluten intolerant, this is worth it.
