Key Lime Pie VII

Funny how a bunch of these reviews start out with "so I made this for my boyfriend/husband and....." well, because key lime is his favorite, I made this for my boyfriend. He made glorious, "now-I-can-die-happy" faces when he took the first bite, and said it was the best he'd ever had, bar none. I also thought it was fantastic: it's super rich, and oh-so-very decadent. The kind of thing you pair with hot coffee or tea. The filling is thick, heavy, creamy, sweet, tangy, and ultra smooth.. (if you're looking for a lighter, fluffier version, IRENED's is also fantastic and not as heavy). Bottom line? This was delicious, and I am already being begged to make another one. Wouldn't change a thing.

Awesome and Easy Creamy Corn Casserole

I've had this recipe in my arsenal for awhile now. It bakes like a charm, and makes a good alternative to corn bread if you're looking for something a little different! Sweet and a little squishy, but SO good!

Creamy Rice Pudding

mine turned out a bit soupy, as opposed to thick and creamy... otherwise it tasted great! I used extra vanilla in mine (is there such a thing as too much vanilla?) and sprinkled cinnamon sugar in just before adding the "extra" milk... yum! I'll try it with short-grain rice next time and see if it helps with the creamy factor!

Grandmother's Buttermilk Cornbread

I've been looking for a good, stand-by cornbread recipe. This one is awesome! It's moist, and a little sweet.. though if you like heartier, buttery types, you could leave out some sugar! I've made this twice, and both times it came out beautifully.

Make Ahead Pie Crusts

Wow, is this a lot of pie crusts... but very tasty and flaky, and they do freeze super well! The only thing I could complain about is finding a bowl/tub big enough to mix them in all at once, but it's really such a small thing to whine about when they're so convenient afterwards! ^_^ Five gold stars, two thumbs up, and thank you so much for the time saver!

Chocolate Rum Balls II

These turned out way too runny, even after adding extra powdered sugar and freezer time! They did taste okay, but really not worth the sticky mess... sorry.

Beer Bread I

My mom used to make this, and I got the recipe from her.. it makes a crunchy, almost hard crust and soft insides. I followed someone else's suggestion and let the dough rise for half an hour.. perfect! It's got a softer crust.. definitely not as rough, and delicious! Thanks for the memories!

Cajun Crawfish and Shrimp Etouffe

The we have a cajun restaurant in Portland called the Montage.. they have an amazing crawfish etouffe that I've been trying to replicate. This wasn't quite it, but still very good. Thanks Rhonda!

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe makes cookies to die for IF you toss the dough in the fridge before baking.. I made this mistake the first time and ended up with big, fat chocolate chip puddles. Extra points if you use a mix of milk and semi-sweet chips!

Pork, Broccoli and Rice Casserole

I use this recipe as a base and just throw in whatever I have on hand-- peas, corn, broccoli, ham, bacon, cheese... you can really use your imagination, and it's super forgiving on the cook times.. The only change I make consistently is that I mix two beaten eggs in with the liquidy ingredients before baking. Thanks Julie!

Fabulously Sweet Pear Cake

Someone else said this should have been made in loaf pans-- I kind of have to agree. It sort of worked as a 'cake', but didn't have the right consistency.. too heavy and wet. Otherwise though it was delicious, and I don't usually like pears that much!

Garlic Broccoli

Two stars because I could at least power through my serving. I wasn't impressed at all. Everything was overpowered by the taste of vinegar, even after I added extra-everything-else... I feel like I just wasted good broccoli. Interesting concept, but I won't be making it again.

Cream Cheese Frosting II

This is my go-to frosting recipe.. I do usually end up adding a little extra sugar, and sticking it in the 'fridge for a while, but it's delicious and easy... and always a big hit at parties. ^_^

Chocolate Ganache

This was my first time making ganache, and I followed the recipe as it's written.. it turned out very rich, VERY chocolate-y, covered well and left a beautiful glossy finish with minimal effort..? Ganache, I'm in love!

Slow Cooker Mussaman Curry

I cheated a little-- I added a little bit of cayenne for kick and cashew paste to make it a little thicker, then served it over rice.. super easy and yummy!
