Peanut Butter Popcorn

Whoa! This is good! I followed the recipe exactly, except I used 3/4 cup of peanut butter and a handful of peanuts. I used two bags of popcorn and used a large disposable roasting pan to gently stir and coat the popcorn. I did not find it too gooey like others did. I will make this many more times! Thanks!

Easy Chicken and Broccoli Casserole

This is totally a keeper. I followed the recipe as is except for a few modifications to make it faster: 1. I used left over rotisserie chicken that got from Costco. 2. I used frozen veggies. I did not have enough broccoli so I added about a cup of peas and a cup of asparagus. I boiled all of my veggies together and added them to my mixture. 3. I added an extra teaspoon of garlic powder and an extra tablespoon of lemon juice, just because I like those flavors. 4. When I combined this all into the bowl, it seemed a bit dry, so I added about 1/2 cup of milk. Who knows if it helped or was even needed. This came of delicious. Thanks for sharing!!

Garlic Mashed Potatoes and Beef Bake

My husband really loved this simple recipe. It was quick and easy to make. I used extra lean ground beef. When I sautéed the meat, I first sautéed about 1/4 of a small onion and 3 small gloves of garlic. I also used low fat Cream of Mushroom soup. For the potatoes, I simply follow the recipe on the box for 2 cups of flakes and added the 2nd half of the can of soup to the completed potatoes. Lastly, I used a total of 16 oz of frozen corn, peas, and freshly steamed broccoli. It was tasty and easy. We will make it again.

Asian Lettuce Wraps

My boyfriend and I LOVED this dish. It was very easy to make and better than PEI WEI. I like mine with a bit more tang. I doubled the sauces, added a teaspoon of garlic powder, and 3 Tbs of sweet chili sauce. VERY GOOD!!!!!

Hot Bean Dip

Garlic Roasted Chicken and Potatoes

My husband loved this. Because he will not eat dark meat, I used chicken breast which I pounded to make tender. I added chicken brother to the pan to make up for the missing "juices". Instead of black pepper, I used red pepper flakes to add some spice to the sweetness of the syrup. Next time I think I will roast some garlic separately just to make it easier to spread the garlic on the chicken. The more garlic the better is my motto. Great recipe. Thanks for sharing.
